Proper English Cottage Pie

I tweaked this recipe to my own tastes (I hardly ever follow any recipe exactly). I added a little more cinnamon than the recipe calls for and it wasn't overpowering at all. I also added some hot madras curry powder, cumin, garlic powder, worcestershire sauce, 2T extra tom. paste, and red pepper flakes to give it a little kick. Like some have suggested, just make the mashed potatoes the way you like them. It's not necessary to follow the recipe's measurements or methods. I tweaked the mashed potatoes by adding crumbled bacon and cheddar cheese to mine. I doubled the entire recipe and filled two 9x9 deep dish store-bought pie crusts. I didn't realize at the time that the crusts were lightly sweetened, but they actually enhanced the overall character of the dish, giving it a delicately sweet, very savory flavor with a nice kick. While my end product may not be considered "proper" by cottage pie purists, it was definitely fantastic and will become a regular on my dinner table. Thanks for the recipe.

Pizza Dough I

THE BEST! Hubby and I lived in Sicily for a couple of years, so when we decided to make our own pizza, we wanted it to be close to what we had in Italy. I followed some of the suggestions and dissolved the yeast and sugar in warm water. I also added seasonings to the flour mixture. With a little practice with the baking, this crust has turned out GREAT! We preheat the oven on a high temp and then bake it on the lowest rack with the bottom burners on only. This ensures that the crust gets cooked thoroughly. AWESOME!

Whole Wheat and Honey Pizza Dough

Hubby did not like this. It was a good dough, but having lived in Sicily for a couple of years, we really wanted something more authentic. This is a good and healthy recipe, but not what we were looking for.

Slow Cooker Pork Cacciatore

DELICIOUS! I was a little hesitant to try this, as I lived in Italy for a short time and hold my Italian food to a very high standard. I was very pleased with the turn out. It would be better with homemade pasta sauce, instead of using sauce from a jar. But with the added veggies and spices, the sauce was great. One major change I did was I only cooked this for 4 hours. I made sure the pork was done. If I had cooked it for the full time, the meat would have turned out too tough and not tender at all.

Slow Cooker Chicken Dressing

Great recipe. In order to cut down on moisture, I cut down on the liquids. Cut broth and cream of chicken soup in half. I also leave the lid off the crockpot for the last hour and keep stirring it to help dry it out a bit. Otherwise, if you follow the recipe without modifications, the stuffing turns out kind of soggy.

Cowboy Mashed Potatoes

I will NEVER make traditional plain mashed potatoes again!! I love this. I have made this twice now. A few modifications: I added chopped onion to the potatoes and carrots. I put the garlic and jalepeno in once the water just started to boil. That way all the flavor isn't boiled out. My hubby isn't a fan of corn, so I left that out. It was best when I put it all together in the food processor instead of using the hand mixer. A few people have said that there wasn't much flavor to this. I didn't have that problem at all. I really think the key is the timing of the garlic and jalepeno. Lots of flavor and just the right amount of 'kick'.
