Me on Valentine's Day
Valentine's Day table
About this Cook
I live in my native state of Colorado with my husband and two dogs. I am a teacher so I love to come home and relieve my stresses of the day by cooking great dinners. I love to cook, it is my favorite thing to do besides working out!
My favorite things to cook
I like to cook anything, lately brasing and roasting are my newest things to experiment with. I am also getting better at bread baking, living at an altitude of over 5300 feet has proved to be a challenge; one that I am slowly conquering!
My favorite family cooking traditions
Dinner, wine, and laughs! It is not uncommon to find my mom, sister, and myself in the kitched during family gatherings laughing and creating. My mom makes great bailey's irish cream cheesecake, my sister makes good oriental chicken, and everything I make is amazing:)
My cooking triumphs
Almost everything, rarely do I make something that doesn't turn out!
My cooking tragedies
Valentine's day 2004, I made a thai green curry seafood dish for my then boyfriend and now husband. The recipe called for 1t.- 2T. green curry paste, I added all 2T. and we ended up calling for pizza! Talk about a steamy Valentine's day! I like spicy food, but not that spicy!

Amish Macaroni Salad
This was a good salad. I only added 1/4 cup of splenda and personally thought it was too sweat. I also added only 1/2 the mayo, used whole wheat macaroni and put cucumber and bell pepper in it because I had them on hand. It dissapeared at the bbq we hosted and I had 4 people ask me for the recipe. I would give it 5 stars when I make it without the sugar:)

Roasted Asparagus and Garlic
Made this recipe with Marsala wine instead of white and added lemon zest and juice. Great, love roasted asparagus!

Shepherd's Pie VI
This is a great base recipe, as are many on this site that I have tried. Like other reviewers I changed a few things; surprise, surprise. I used 1 lb. 93/7 lean ground beef, added a small diced onion, 2 cloves crushed garlic, 1 8 oz. pkg sliced mushroom and sauteed. Added 1 T. whole wheat flour, cooked a few minutes and then stirred in 3 T. worshteshire sauce, 2 T. tomato paste, and 1 cup beef broth. Stirred in 1 cup frozed peas. Added parm and fresh basil to potatoes instead of cheddar, delicious!
