Boilermaker Tailgate Chili

This chili came out really well! I am not a huge fan of beans, so I only used 2 cans, instead of 4. I live in the northeast and couldn't find "chili" beans, so I used kidney beans -- that's probably the same thing. I served this with sour cream and bacon bits, and it was a hit!

Smothered Green Beans

We really enjoyed these beans. Like many others, I used beef broth. I like my greenbeans pretty done (not very crunchy), so I used more than the recommended quantity of liquid. I also added the bacon back in right at the end. These are awesome.

Butternut Squash Soup

I made this recipe according to the directions until, like other reviewers, it came to the cream cheese. I put in one box, half the proposed amount, and I still found the cream cheese taste to be really overpowering. I wish I would have put in 1/4 of the amount and then added more to taste. Also, like others mentioned, the finished soup was extremely thick, like a dip. I probably added another 3 or 4 cups of chicken stock to thin it. All in all, I would make the recipe again because it's really easy, but I will make some major tweaks. Oh, and here's a note for the other beginner cooks out there: one butternut squash is more than enough to make the soup. You do not need to purchase multiple squash. 6 cups sounds like a lot, but a squash goes a long way.

Quick and Easy Clam Chowder

This is amazing. I was pretty skeptical of how a bunch of cans could taste just like clam chowder I've had in fancy Boston restaurants, but it really does work! I made it overnight one night while my in-laws were visiting, and we had it for lunch several days. They loved it! I added one large potato, cut into bite-sized pieces. I also did not drain either cans of clams -- I dumped them both in, juice and all.

Slow Cooker Chicken and Dumplings

I just didn't love this like I wanted to. Like other reviewers, I wasn't a huge fan of the biscuits as dumplings. Also, I think the recipe needs some veggies. I added some carrots and peas. If I try again, I will make dumplings and add even more veggies than I did the first time.

French Onion Soup Gratinee

This has become my famous soup. Every time my husband and I have French Onion at a restaurant, he says, "Yours is much better than this one." I am terribly slow at slicing, so I bought a mandolin. It helps a lot. Also, it really is worth the time it takes for the onions to truly caramelize. A few times I've jumped the gun and it hasn't tasted as good.

Mini Cheesecakes I

These are really good, but the only thing is that it didn't even come close to making the 40-something servings it says it will make. In fact, if you want your cakes to have any kind of mass at all, I'd say to plan on about 25-30 out of a single batch.

Burgundy Pork Tenderloin

I thought this came out really well, but I made a beginner's mistake. I decided to double the gravy recipe. The pork ended up almost entirely submerged in the wine. It ended up taking MUCH longer to cook, like an extra hour. I liked having extra gravy, so if I make this again, I will just plan on cooking it a lot longer than the recipe says. I also added some sliced fresh mushrooms to the liquid with the onions and celery, and they were delicious. I served with mashed potatoes and a side of maple-glazed carrots (from this Web site).

Marinated Flank Steak

The fajitas I made with this recipe far surpassed anything I could have eaten at a restaurant! I put sliced onions in the marinade, which I cooked in a pan on the stove while the flank steak was on the grill. I marinated for 24 hours in the refrigerator. I served the fajitas with sour cream, avocado slices, homemade salsa and the onions from the marinade. I also made borracho beans.

Angel Chicken Pasta

Absolutely awesome! We loved it. I used "thin cut" chicken breasts, so only cooked them in the oven for 30 minutes. I used fresh chives and regular cream cheese (instead of the chive cream cheese), and I doubled the sauce recipe and used 2 casserole dishes so I could single layer the thin-cut breasts. Thanks for the great recipe!

Penne with Spicy Vodka Tomato Cream Sauce

Delicious, and so easy! I only spent about $7 on the ingredients (already had oil, red pepper, vodka, parsley from the garden, and Parmesan cheese), so it's also really inexpensive! A+

Shepherd's Pie VI

This was SO GOOD! I took other reviewers' advice and used gravy powder instead of flour, added garlic, and added some worcestershire sauce. I also omitted the cheese. It was really easy to make! Serve with Tabasco--it adds a nice kick.

Special Irish Beef Stew

I made this stew because I had a lot of veggies to use up from holiday cooking. I just used a random dark beer I had in the house. Also, I added celery with the carrots and potatoes. I will echo what others said about the need to simmer longer than an hour. At an hour, the stew was edible, but the meat was still pretty tough and the potatoes were not cooked through. It was much better after 2 hours. I omitted the cornstarch-it seemed thick enough to me. All in all, I really enjoyed the flavor and heartiness of this stew, and will definitely make it again.

Amazingly Good Eggnog

I made a batch of for a small Christmas party thinking that, since eggnog is so rich, people would only want a small glass each. Instead, I ran out in the first 30 minutes. Everyone agreed that it was delicious. I never drink store-bought egg nog because eggs sort of gross me out, but I thought this stuff was unbelievable. (I would like to note that separating 12 eggs was disgusting.) Also, if I would have put in the prescribed amount of alcohol, it would be way too strong (and I'm no prohibitionist). I put in a small amount and let people add additional rum if they wanted.

Sour Cream Pork Chops

These pork chops are very moist. I thought the sauce was a little bland, but my husband really liked it. I have to admit that I usually look for easier dishes to use with the slow cooker (everything in one pot, no browning beforehand or making sides). But, this is a far superior way to make tender pork chops than any other way I've tried.
