Champagne Punch III

I used this recipe for the first time for a large gathering of about 75 people. It was a risk to use a new recipe for such a big event, but it was a big hit! I got tons of compliments on it. Because I was trying to stretch the recipe, I doubled all the ingredients, and added additional sparkling water to taste. Great recipe!

Perfect Berry Shortcakes

Yum! Just made these and they came out great! I made them slightly smaller and got about 8 out of each batch (doubled the recipe so I could take these to a party). I watched them closely while cooking to make sure that they didn't overcook. I mixed some chopped spearmint leaves in with the whipped cream. Wonderful!

Curried Coconut Chicken

This was very good! My husband really, really loved it. It will definitely take more than the prescribed amount of cooking time, so plan accordingly. I did make a double batch of the "sauce," and probably cooked it down for 2 hours. I used slightly less sugar than called for in the recipe. All in all, this was an easy recipe, despite the cooking time. I did set off our fire alarms when I was cooking the curry in the oil!

Eggplant Parmesan II

A friend had a baby, and I made this to take to her and her (vegetarian) husband. It came out very well. The biggest hassle was sweating the eggplant. I don't know if I will do that again. I will pre-bake the eggplant in the oven so it will be crispy. It was good--perfect for a mix of people who are vegetarians, and people who like meat. Eggplant is a "meaty" vegetable!

Asian Salad

SOOO delicious! I can't wait to make this again. I used the bagged cole slaw mix, and it turned out well. I toasted the Ramen in the oven. When making for just a few people, I will not mix in the Ramen until just before serving. Otherwise, the noodles get really soggy if you want to have the salad the next day as leftovers. I will mix up the dry ingredients just prior to eating.

Easy Batter Fruit Cobbler

This recipe is so easy and delicious! I can whip this up so easily and quickly, and I usually have all the ingredients in the house. I've been using blackberries in it, but am looking forward to trying fresh peaches when they're in season. I like to pour a little bit of heavy cream (a few tablespoons at most) over the warmed cobbler. This is how my family did it when I was a kid, and I love it that way!

German Spaetzle Dumplings

I had a hard time getting these to the right texture for my spatzle maker, but I think that was just my inexperience. I added additional flour and they came out OK. I thought there was a little too much nutmeg, and I will put in slightly less next time. I served it with Hungarian goulash. Delicious!

Morning Glory Muffins I

These came out deliciously! I used the food processor to chop everything. I used applesauce instead of the oil and apple butter. I made them a week ago, and they're still incredibly moist. My friends loved them, too.

Super-Delicious Zuppa Toscana

This soup is AMAZING. It really is like the soup at Olive Garden. A few modifications--I do not use the bacon. I use a bit less cream (I just pour it in until the soup is the right color for me. It's probably 1/2 C of cream.) I use kale instead of spinach, since that's what OG does. Sometimes I use the bulk hot Italian sausage instead of the mild. I like the extra spiciness! I have made this so many times, and it is always wonderful!

Chicken Marsala

This came out generally well, but a few notes: I tried adding garlic while I was cooking the chicken (per another review), but it ended up burning and kind of making a mess. If you want to put the sauce over pasta, you're going to have to cook it down A LOT, and you're going to want to make WAY more sauce than the recipe calls for. I ended up using practically the whole bottle of marsala wine, and I used a lot more mushrooms. The sauce came out well. I think next time I will use oil instead of butter to cook the chicken for health reasons.

Classic Bran Muffins

Really good! I used whole wheat flour, applesauce instead of oil, and almost a whole cup of dried cherries (I don't prefer nuts). I usually hate "health" food, but am trying to lose some weight, and decided a healthy breakfast every morning would help get me off to the right start. I am planning to freeze 6 of them... I hope they thaw and still taste good!

Banana Pudding IV

This pudding is absolutely delicious! I had some great banana pudding from a local barbecue joint, and I kept craving it. I found this recipe, and it is just as good as the dessert I had at the restaurant! Just a warning, this makes a VERY large quantity of pudding. I initially bought the wrong size package of Jello brand vanilla pudding (there are two sizes, one is about 3.5 oz, and the other is 5 oz, so be sure to buy the right sized box!) I had to run back to the grocery store to buy another package when I realized my mistake. I had mixed together all of the ingredients and when it wasn't firming up appropriately, I realized I'd bought the wrong package size. Anyway, this is a delicious recipe! I'll make it again! Very refreshing when served very cold.

Marinade for Chicken

This stuff is unbelievable! We marinated chicken breasts for about 30 hours in the refrigerator. We had people over for a barbecue and they were raving about the chicken. It is tender and moist. I will not use any marinade other than this one for chicken!

Catherine's Spicy Chicken Soup

I'm sure someone has pointed this out, but the "cook time" of 45 minutes listed at the top of this recipe is clearly off. The very first step of the soup requires one hour. I was careless, saw the 45-minute estimate and planned on making this in 45 minutes for dinner. I was unable to finish in time, and we did not have this for dinner. It was really tasty when it was finally finished, but I wish the cook time at the top of the recipe would be adjusted.

Instant Russian Tea

This is really good, but I do caution people to add sugar gradually. Obviously the Tang already has sugar, and one of the two teas I bought was also sweetened (there was no unsweetened option for the lemon instant tea at my grocery store). I only added about 1/2 cup sugar, and it came out the right sweetness for me. If I would've added the full amount, it would have been WAY too sweet. Overall, this is a great base recipe.

Asian Lettuce Wraps

These were really awesome! We love to get them at P.F. Chang's, and while I don't think they were quite that good, they were close! They were also really easy to make. The grocery store was out of the recommended types of lettuce so we had to use iceberg and it was fine.

Cowboy Caviar

This was fairly easy to make and it came out pretty well, but I put on a whole cup of Italian dressing and it was WAY too much. It was swimming in dressing. I put it in a colander to drain the dressing and after that the salad was much improved. Otherwise, it was quite good.
