Quinoa and Black Beans
I'm experimenting with healthy cooking, and this was very good as a side dish to pork tenderloin (although it would also be a good light main dish). I had never cooked quinoa before, but it was quite easy. I rinsed it before cooking. I also used about 3/4 of a can of Rotel tomatoes with green chiles, and I really liked the addition of tomatoes. I will enjoy having the leftovers for lunch!

Hot Artichoke and Spinach Dip II
Really good, easy recipe. I used my mixer. Tasted great. 6 women cleaned it out within an hour.

Sam's Famous Carrot Cake
I have to admit that I HATE carrot cake, and this was no exception. But, I made it for my husband's birthday because his absolute favorite cake is carrot cake. I followed the recipe (using the food processor), and did everything as directed except for the nuts--my husband asked me not to use nuts. He really loved it, as did our friends who ate the cake. As for me... Well, I got tiramisu to-go from the restaurant where we ate dinner.
