Lemon Cream Cupcakes

These are amazing - didn't use this frosting recipe because I have another favorite - the lemon taste is subtle, and the consistency is so wonderful! A perfect, light cupcake...but not too light, like the ones that fall apart before you can even take a bite - this recipe is a keeper!

Exquisite Yeastless Focaccia

This is so good! I made the dough exactly as written- in a Kitchen Aid, with the dough hook. I spread the dough into a round 9 inch cake pan which gave me chewy, soft, evenly baked bread. This tasted way too good to be so simple. I added pepper and fresh rosemary, drizzled it with olive oil and dipped it in balsamic vinegar - yum!

Grilled Marinated Shrimp

Strawberry Lemon Trifle

This is a great recipe, although I messed with it - not too much though. I used a boxed lemon cake recipe and added fresh lemon juice to the batter. I made the custard mix with more fresh lemon juice instead of the water/grape juice and also didn't go low-fat (I was feeding a bunch of guys, they don't care). Instead of the strawberries I made a fresh blueberry, sugar, cornstarch, lemon juice compote and poured it between the layers of cake and custard. I also made a batch of whipped cream to spread and sprinkled blueberries on top. It was wonderful - thanks for the recipe - I would like to try it with strawberries too.

Zucchini Brownies

Didn't use the walnuts or the frosting - but added a bunch of chocolate chips...I've always been a fan of my mom's chocolate zucchini cake, and these are a close contender. Made a batch and invited friends over for game night - they disappeared. Thanks for this great recipe!

J.P.'s Big Daddy Biscuits

These are wonderful! So quick to make - easily substitute butter for the shortening...they were great with blackberry jam and I can't wait to use them for biscuits and gravy. I put all the ingredients in my Kitchen Aid, mix it, knead it, cut them out, bake...it seems wrong that homemade biscuits are this fast! They are flaky, but moist. Thanks for a great recipe.

Easy Chocolate Trifle

When my in-laws popped in unexpectedly, this was a life saver. I had seen this dessert brought to potlucks, but had never made one myself until the other night. It is so easy to put together, but the combined presentation and taste make it seem really special. I now have the ingredients stashed away for those last minute guests.

Slow Cooker Barbecue Goose Sandwich

This recipes has been a life saver. My husband is an avid waterfowl hunter and our freezer is consistently stocked with geese...and recipes are hard to find! Young birds often taste wonderful cooked other ways, but older birds often taste tough and gamey. This is the solution. There is virtually no waste - I throw the goose breats and legs in the crockpot, cook as indicated and the meat falls off when cooled off. The possibilities are endless after that. We add melted cheese and toast the buns. I have even pre made this, thrown it in a cooler and taken it camping - it re-heats beautifully. Thank you for this recipe!

Layered Spinach Salad

This was beautiful! Great presentation...however it took a topple in the car on my way to the potluck, so - I experienced it as a tossed salad - not nearly the same look, but everyone said it tasted yummy - the tortellini is really good and not expected - next time I hope it stays upright!

Day Before Mashed Potatoes

Loved the 'day before' aspect of this, but I gotta say I think they would have tasted amazing the night I made them, but came out a little dry on Thanksgiving. The family all said they were great though - especially when drizzled with gravy on Thanksgiving.

This was great - adults and kids alike enjoyed it - although be careful on the serving amount you make - I still have tons of the concentrate in my freezer. (Can't hurt to be prepared for company, right?)

Pear Honey Cranberry Sauce

My first try at homemade cranberry sauce this Thanksgiving and it was amazing - I'll never go back to canned. The consistency of mine was somewhere between a jelly and a whole berry sauce - the best of both worlds.

Almond Lemon Chicken

I used this recipe as a jumping off point and estimated the ingredient amounts and it still came out great - didn't have chicken broth, beef seemed to work just fine. I used peach jam like another reader, nixed the parsley, went with honey mustard and used an entire giant fresh lemon. It tasted great over couscous. I will play with this one again. :)

Braised Lemon Pheasant

I made this recipe the other night for my husband and I - he had gotten two pheasants that morning and it was wonderful! No gamey flavor at all - I used an entire fresh lemon and paired it with baby red garlic mashed potatoes. Great recipe - perfect for people just beginning with game recipes too.
