Mild Cheesy Chicken Enchiladas

The recipe called for too much cheese for our tastes. I reduced to around 1 cup and increased the chicken. I also mixed some salsa with the tomates. Tasted good - very hearty - I appreciated that it did not have a traditional enchilada sauce.

Coconut Ambrosia Salad

Very tasty and well received at the party I attended. Instead of sour cream, I used 1 8-oz container of low fat, plain yogurt. I also used almost a 16-oz container of Cool Whip and extra fruit. Chilling the ingredients beforehand helps if you want to prepare and go.

Salmon Fillets with Creamy Dill

The taste was decent but the appearance was unpleasing. The yellow, thick sauce did not compliment the pinkish salmon.

Turkey Squash Casserole

I modified the recipe by using egg whites, eliminating salt, and decreasing fat (olive oil, not butter) by half. Also, I used home-crushed water crackers rather than bread crumbs. Delicious flavor and texture! My husband and I both loved it. Disclaimer: I love mildly seasoned foods; I can see how other cooks might want to add seasonings.
