Chicken Pesto Paninis

I grilled the onion and pepper first to soften them a bit. I used thick slices of a sourdough boule (buttered) and grilled it on the Foreman grill and they were fabulous. I made these to use leftover pesto we had from making pesto pizza. I would do it again anytime.

Mexican Bean Pie

For my tastes, this recipe was pretty bland. I did give it a second chance and this time I added another 1/2 Tbls. chili powder, a chopped onion, and, as another review suggested, layered salsa in the pie. It was much better, but still not too flavorful. I probably won't make it again, but it is good for people who like mild food or for young children.

Mexican Chicken I

This is delicious and so incredibly easy! As others suggested, I put the beans in with the mixture and they came out great. I added onion to make it like a fajita chicken and served with rice and tortillas. I baked 4 large breasts for 1 hour at 375 degrees and that was sufficient. I have also halved the spices and salsa for the children I nanny (who are picky eaters) and it was a big hit with them. This will definitely be one of my regulars.

World's Best Scones! From Scotland to the Savoy to the U.S.

I made these raisin scones with the children I nanny for a tea party we had. They were fabulous! They were soft and delicious. The children and family loved them, even the dad who told me he doesn't normally like scones because they are too dry. They did get old fast which may just happen with scones, but by the next day, they were already not as nice.

Garlic Bread Fantastique

This is a fabulous recipe. I followed the recipe exactly minus the sage because I didn't have it. I made it for a family dinner with lasagna and it was a huge hit. This recipe made enough for 2 baguettes so, you may want to make half for 1 baguette.

Simple Mexican Rice

I made this as a side dish for a dinner for my in-laws (who are English and don't get much Mexican food). It was easy and delicious. They loved the entire meal which included Mexican Lasagna II from this site, but they particularly loved this rice and asked for the recipe.

Sour Cream Coffee Cake III

This is wonderful coffee cake with a perfect consistency. I added chopped walnuts to the filling since I had extra and I thought that was delicious. As someone mentioned, I wet my hands to spread the batter without sticking and that worked very well.

Baked Pork Chops II

I am not usually a fan of pork chops but, I really enjoyed these pork chops. It definitely had a kick which was a good thing. For the tomato sauce I just used a jar of pasta sauce since that is what I had and I really liked it that way.

Amazing Whole Wheat Pizza Crust

This is fabulous. I make it with the children I nanny. They love to knead and roll the dough. It turns out beautifully and delicious. I have made the regular recipe and also switched the flour amounts (1 cup of whole wheat and 2 cups of white flour). Both were great.

Creamy Tomato-Basil Soup

This soup is delicious. I made it for the family that I work for as a nanny using their fresh tomatoes and basil. I served it with some homemade focaccia and sausages; it was a wonderful meal.
