Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Dec. 3, 2011
I made a batch with cranberries and a batch with raisins. By far the best oatmeal cookies I've had. Love the spice in them!

Banana Sour Cream Bread

I got so much great feedback on this, this is the recipe I will be using from now on. Absolutely delicious and the perfect texture. I used a crumble on it and sprinkled the pans and oh wow so good!

Really Rich Banana Bread

Reviewed: Nov. 14, 2011
This was not dense at all. Followed it to the letter. Took maybe 50 minutes to bake and it still burnt. Had I left it in the full 90 minutes I would have had bricks that had no banana flavor. A total waste of a dozen eggs seeing as I made a double batch. Will need to try a different recipe that calls for alot more bananas and add nutmeg and allspice. That part was good.

Au Gratin Party Potatoes

Reviewed: Apr. 19, 2010
I scaled this down to 15 servings, or 1/4 of the original recipe. I tweaked it a little, and there are tweaks I would do for the next time. I scrubbed my potatoes and left the skin on when I cubed them. The next time I make it I won't pre-boil my potatoes at all. I boiled them for about 5-6 minutes until they were just under done and they turned out a little mushy and hard to mix with the other ingredients while still trying to keep the shape. Also, the scaled down recipe called for 3/4 pound of Velveeta. I'm just going to throw the whole pound in next time. Make it a little cheesier. The flavor was very good and I got a lot of compliments. I will make it again as it was quite easy to make, especially with leaving the skins on.

Easy Apple Crisp

Reviewed: Sep. 2, 2009
I made this the quick way and used cinnamony apple pie filling and it turned out really good. Its so easy to make. I added a couple handfuls of oatmeal to the crumb mix and it was still very moist, but not wet. Also before I put it in the oven I sprinkled it very lightly with a cinnamon sugar mix. Topped it with whipped cream before we ate it. Again, it tastes like I spent all day working on it!

Grilled Brown Sugar Pork Chops

Reviewed: Jul. 26, 2008
Holy cow, the glaze was awesome. If I could I would drink it! I used the glaze on a different pork item I grilled. It was on some rolled pork chops. I dipped the chops in the glaze then put then on the grill. I ended up with some beautiful glossy delicious chops. Definately a keeper!

Cinnamon Rice with Apples

This was just so so. It wasn't totally gross, I just wouldn't make it again. The apples were good, just the texture with the rice and apples wasn't appealing. Flavor ok, texture eh.

Very easy to make. I would use more apples myself, but I love apples. I too made one loaf and the rest in muffin tins. Chewy with a crunchy top. Will make again.

Creme Brulee

Reviewed: May 14, 2007
I followed Chefpeons suggestions and it came out absolutely perfect. I amazed myself. I do not own a kitchen torch so i had to put it under the broiler. The top came out crispy but it did heat it up way way too much. In that respects it is a 4 star, but had I had a torch, it is a 5 star. I will definately be investing in a torch for the next time around. This is my boyfriends favorite dessert and he said it tasted like it came from a fancy restaurant. I will make again. Too bad it has to be so fattening and 'bad' for you! Sure was delicious though!

Herb Roasted Pork

Reviewed: May 14, 2007
I made this with a pork butt roast and it was so good I just can't describe it. I did double the glaze and it was perfect for a 7# roast. I also went off the cooktime instructions on the roast, not on this recipe. But I didn't change any of the ingrediants and it was wonderful. I have since used the rub and glaze on just regular pork chops. Turns out so yummy. I have made this recipe at least 10 times and have never had a bad review yet.

Yummy Lasagna

Made it as a special Valentines Day dinner for my family. The guys didn't like it but the girls did. The guys said it was too dry, and I even added more sauce than what it called for. If I made it again, it would have to be tweaked.

S'mores Apples

Reviewed: Nov. 23, 2006
Made these for Halloween. Turned out great. I made a couple of changes however. I took the graham crackers and crushed them to a fine consistancy and rolled the caramel apples in that. Then I drizzled bakers chocolate and marshmallow cream over them. Looked fine and tasted great. A little messy, but will make again.

Pleasant Pork Chops

Reviewed: May 9, 2006
Tried this recipe and it came out fantastic. We love beef stroganoff so the sauce was delicious. The meat was moist. I think to prevent it from drying out you need to always make sure you have plenty in the pan while simmering, to almost the top of the porkchops, almost poaching the chops. That way they won't dry out. I didn't have any chicken broth so I used chicken boullion and it came out a bit salty but that was my fault. Not sure how the other reviews sauce came out like salsa. When you saute the onions they have to be cut in rings, not chopped perhaps. All around it was a bit hit with the family and I will definately be making it again and will make it with chicken as well.

Strawberry Jam

Reviewed: Oct. 13, 2005
I've never canned anything before so I was a bit afraid. Once I got started it was real easy. Got the plate testing down on the first try. I had bought some small jars with the latch lid and rubber seals to put this in for Christmas gifts. I had a friend who does canning all the time suggest a wax cap just to be safe. I did that and everything turned out perfect. It was very good and even my very picky husband said it was good. I wasn't aiming for anything spectacular...it tastes like strawberry jelly and that's exactly what I was aiming for. Next time I will have to try some raspberries in it or blueberries too. Thanks for the wonderful recipe.
