I make this often with different variations depending what's in the pantry and EVERY time it's a winner. A tin of sweet corn (reduce the stock) works - etc. FAMILY FAVORITE

Nana's Christmas Stollen

Magnificent. I used 4 x 8g sachets of dry yeast, 3 whole eggs, and somewhat more fruit in mine. My cardamon was giving me the willies trying to crush it so i put in what I had and added some allspice. YUM YUM YUM I'm the greatest hero in the family (my mum totally flopped at her stollen attempt).Merry Christmas

Easiest Peanut Butter Fudge

Reviewed: Oct. 25, 2007
Awesome! The Best. And awfully hard to kill. The recipe amounts are forgiving, you can experiment a little with flavour. It also works equally as well with ICING SUGAR as it does with ICING MIXTURE (added later: and caster sugar if niether are available!) . The MAIN TRICK is to not boil it too long. Soft ball (drop a little in a glass of water a soft ball will form) stage will give a lovely creamy consistency. If it gets too hot (boils too long) you may end up with dry pebbles as your sugar tries to head off to toffee land (I'm Australian if you're not sure what I mean). (addition:) Also, works as well with smooth, cruncy, sugar/salt free fresh smashed pb - whatever's yr thing. ENJOY
