These are my new favourite cookie in the entire cookie world! Let the cookies set for an hour after you assemble them to allow the jam to set and they'll be even more perfect (if you can wait that long)!

Fabulous Homemade Bread

Vegetarian Nut Loaf

I also served this to meat eating friends who left asking for the recipe! I'm definitely serving this again. I did substitute half of the carrot with zucchini and served it with a pomegranate/cranberry sauce and roast potatoes. I also chopped the ingredients the day before and baked the loaf for 45 minutes on the morning of my dinner party, then stuck it in for 20 minutes at dinner time and it turned out delicious and moist.

Don't let the soy sauce fool you, this recipe is AMAZING. Make sure you get proper soy sauce though, the cheap stuff will make it tastes like cheap chinese food. Pearl River Bridge, or Lee Kum Kee LIGHT (refers to the colour) soy sauce are my top recommended brands. Kikkoman will do also since it's available at most grocery stores without having to go to the Chinese grocer. Never, EVER buy VH or Mr. Goudas or generic brands of Soya Sauce. I didn't mean to review Soy Sauces but success of this recipe is so dependent on it!

Luscious Spinach Artichoke Dip

I've made this dish for so many parties and people can't get enough of it. No substitutions needed, it's the best spinach artichoke dip recipe I've tried to date. If you microwave the dip to warm it up a little before you put it in the oven, you can significantly reduce your baking time. It's ready when the top starts to brown.

Lavender Tea Bread

This bread was just perfectly sweet and eggy. i would recommend grinding the lavender with a mortar/pestle or food processor to infuse the bread more evenly. i served this with homemade concord grape jelly and people LOVED it.

Surprise Muffins

holy COW these are INCREDIBLE! I would love these even as a stand-alone bran muffin, but the surprise in the middle just blew me a-WAY! i used homemade concord grape jelly. the muffins were moist and the tops were crispy and awesome. now i just need to figure out how to get MORE jelly in there without it spilling over. wow wow WOW! i didn't have any jelly spilling over issues. i filled the cups 3/4 full, made a little dent, then put the jelly close to the middle. some of it oozed to the sides when i spooned the extra batter on top, but as long as this happened within the paper liner, it all baked okay and didn't bubble up out of the top. I'll definitely double the recipe next time. This only made 6 regular sized muffins. mmMM!

Vegetarian Shepherd's Pie II

This is now a staple recipe at my place. Friends and co-workers like it, meat eaters included. i've never made it without someone genuinely wanting the recipe, though i do it without walnuts because I don't like them and I use my favourite mashed potato recipe for the topping which includes cream cheese and butter if i'm feeling indulgent.

Pesto with Arugula

Carrot and Ginger Soup

What a great recipe! I'm not a huge fan of cooked carrot so I just made it with more squash instead and it was perfect. The cinnamon and cream are amazing touches. I'll definitely be making this again!

Pumpkin Muffins II

My friends love these muffins and they seem to get even tastier after a day or two. I went full spice, replaced half the oil with apple sauce and sprinkle a little bit of brown sugar on the tops before baking. I love this recipe!

Awesome Broccoli-Cheese Casserole

This recipe is super tasty and really easy to make. I substituted silken tofu for the mayonnaise (you can use regular/medium too depending on the texture you prefer). Serve with wild rice and you've got a hearty meal!

Chocolate Macadamia Nut and White Chocolate Chip Cookies

I think the recipe calls for too much flour and not enough chocolate. The dough and cookies come out crumbly and flour like. Definitely needs modifications. A type-o maybe?
