Spicy Chicken Enchiladas

Everyone loved it, even the kid who like nothing. Used dried onions and canned jalapeno. I also used a lot more cheese,in the mixture and topping. Also used the 10min enchilada sauce on this site.

I'm sorry but my family and I did not care for the flavor. It was not tender, and marinated for two days. Just not our taste I guess.

Garlic Chicken Fried Chicken

Marinated chicken strips in Franks Red Hot all day. Used 1 tbs of all the spices. Covered in flour then egg&milk mix then coating. I refrigerated for thirty min as CookinGheri suggested. Cooked on med high about five min per side. When served with ranch it is like a boneless hot wing. Everyone is crazy about them. It is unbelievable how good the breading stays on. Thank you so much for taking the time to share your recipe.

Chili Cheese Snacks

These were good. Next time will add more pepper sauce or use jalapenos instead of chilies. I also broiled for a minute or so right before they were done, seemed to work well and were not doughy at all.

Kung Pao Chicken

This recipe was quite good. Glad I followed others and quadrupled the sauce, it still needed a bit more if your going to serve it with rice and broccoli as I did. I agree 2oz of chili paste is more than enough when quadrupling, might go with 1 1/2 next time.

Yummy Honey Chicken Kabobs

This is the best tasting chicken ever. I made a batch for home and we all loved it. Two days later I made a huge batch for a party we went to. Was loved by all. The only thing I do different is to sprinkle a bit of dried jerk seasoning on just before grilling. The honey does tend to burn, but I think the charred parts are the best!

Easy Slow Cooker French Dip

Fajita Marinade I

Thought this recipe lacked something. Chicken sat in marinade for two days. Not much flavor except lime. Chicken was dry, and I did not overcook. It was too watery when added to the heat, may be better if omit water and add some more oil, because I like them a bit more oily like at my favorite Mexican joint.

Burrito Pie

My children loved this. This recipe made three pies for me. I made one without refried beans for the kids, and I froze one. I did as another suggested and spread the beans on the tortilla and put it upside down over the cheese. Thought this recipe would taste like regular old tacos with more work, but it was quite tasty and different. The pie that I froze came out just as good or better, just allow for more cooking time.
