Sarah's Banana Bread Muffins

Reviewed: Feb. 2, 2010
I followed the recipe almost exactly to a tee-- except I added some chocolate chips at the end (what can I say, Momma needs her chocolate). The muffins were good.. but not GREAT. They weren't the moistest or most flavorful muffins ever. I don't know if it was due to the white sugar (instead of brown) or lack of vanilla/cinnamon.. but they came out being pretty.. well, average. With that said- I think they'd be a great recipe if making with children. The limited ingredients and straight forward directions make it perfect for beginner bakers!

Brown Sugar Meatloaf

Reviewed: Dec. 11, 2009
I don't even generally LIKE meatloaf. Just listen to the name of it 'meat-loaf'. Loaf of MEAT. Ugh. Nothing about that sounds appealing in the slightest.. I tried this recipe only because it had such great reviews and because my fiance is a meatloaf-enthusiast. Well-- let's just say that I am SO GLAD that I did! It was absolutely the best meatloaf I have ever had. I did like many other reviewers, and made 'mini-loaves' in a cupcake tin. Baked at 350 for about 25 minutes. I also put the brown sugar/ketchup mixture on TOP, rather than on bottom. These were moist, FULL of flavor and so so filling. My fiance brought the leftovers for work, and sent me a text message at noon expressing how glorious this meal was the second time around. Well done!

Chocolate Eclair Squares

Reviewed: Nov. 10, 2009
Very yummy. Easy, quick, unique and tasty tasty tasty. Love how few ingredients it has-- makes this basically the ideal dessert to toss together for a BBQ or picnic. I made a few revisions-- used mini nilla wafters and they softened pretty quickly. I sampled the dish after only an hour of it sitting in the fridge, and the mini nilla's were almost entirely saturated by then. Also, I did a crushed graham crack base. That really helped to be able to easily slice and dish up. And boy did the graham crackers crumbs taste good with the filling! Next time I make it, I'll forgo the nilla wafers on top.. and in their place put some fresh berries.. I think fresh fruit would help lighten this up a bit and give it at least a shred of nutritional value :) Will definitely make again! Looking forward to playing with the recipe and toppings!

Colleen's Slow Cooker Jambalaya

Reviewed: Oct. 19, 2009
I made this, followed the recipe exactly, and it came out pretty liquidy.. Very much like a Jambalaya Stew/soup almost. I was hoping for something thicker. Was still tasty though, and my boyfriend has requested that I make it again. I, personally, just wanted something a bit thicker and with more of a kick. This was on the milder side of 'cajun' recipes.

Strawberries 'n' Cream Trifle

Reviewed: Oct. 19, 2009
This is OUT OF THIS WORLD DELICIOUS! Made it for a back yard BBQ.. and... wow. Super easy to make, and a big crowd pleaser. I imagine you could really get creative with it too, using all sorts of different berries/fruit... or maybe even find a way to toss in a little rum to make it a little more 'fun' (haha). Or, you can just not change a darn thing and follow this recipe to a T-- because it's just perfect as it is! Love this!

Alyson's Broccoli Salad

Reviewed: Oct. 19, 2009
Holy.MOLY! This is so so so yummy. I could probably eat it all day long. Huge fan. I think that will become my 'go-to' dish for potlucks and parties. It was so tasty, so easy, and definitely a nice change from the regular party/potluck favorites. It was so good-- I'm craving it now! I followed one of the reviewer's advice and used fresh grapes instead of raisins. Glad that I did--- the grapes added a nice, fresh, juicy crunch.

Slow Cooker Beef Stew IV

Reviewed: Oct. 19, 2009
I have never in my life made beef stew before.. I am just not a big beef fan.. but I decided to give this a whirl to please my boyfriend.. and, I can't lie-- it was YUMMY. We used just super cheap 'Beef Stew' Beef Chunks, and the meat came out *so* tender and delicious. Packed the pot full of veggies as well. Super yummy! My boyfriend enjoyed it even better the next day for lunch! Used white wine instead of red.. because that's all we had around... but it came out fantastically. Adding this to me ever-growing rolodex of awesome CrockPot recipes!

Insanely Amazing Jalapeno Cheese Dip

Reviewed: Oct. 19, 2009
Made this for a potluck and it got RAVE reviews... and disappeared in less than 15 minutes. Huge hit. I followed the advice of some of the other reviews and did 1/2 cup sour cream and 1/2 mayo. Turned out well! And it's SUPER easy to make. Definitely a crowd pleaser! However, due to it's extreeeeemely unhealthy properties, I'll be saving this only for special occasions :)

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Jun. 26, 2009
DELICIOUS! Revisions::: lessened the salt and increased the baking soda a bit (as suggested by other reviewers)... and added 1/4th tsp of cinnamon. The cinnamon really added a very nice, subtle taste. No walnuts for me-- just chocolate chips. Just before baking, I thought that my dough was still a bit too wet, so I added another 1/4th cup of oats just to be safe. Note: these cookies really flatten out in the oven. Cookies turned out wonderfully. My boyfriend and I ate the entire batched in less than 48 hours. So so good.

Ann's Shrimp Etouffee

Reviewed: Jun. 16, 2009
loved it.. honestly, I feel like this is a really great 'base' recipe. I think that if I followed this recipe exactly it might turn out a little.. bland? Made a few revisions to accommodate my own tastes.. Chicken stock instead of water.. a small can of tomato paste.. chopped green pepper.. added cooked, brown rice at the very end to thicken it up and add some heartiness.. come chili powder & hot sauce for more kick.. Oh, and some salt to taste. I know.. a lot of revisions!! I'd use this recipe as a starting point again, for sure! Very yummy.

Caramel Filled Chocolate Cookies

Reviewed: Nov. 26, 2008
I've made these cookies several times and always love them. I made them recently for a 'Holiday Bake-a-thon' with friends and they were a HUGE hit. Super easy, look great and taste even better!! One tip-- don't use 'Rolos'. The caramel in Rolos gets stiff and chewy after baked. My favorite caramels to use are Caramilk Minis.

Sweet Potato Casserole I

Reviewed: Nov. 11, 2007
This was absolutely amazing. I made it for thanksgiving (canadian) and it was SO good. Got mad reviews. I didnt change a thing about the recipe, and it turned out beautifully. Actually, I was a bit nervous about cooking it. The truth is I have never in my life made thanksgiving dinner.. and I had also *never* cooked sweetpotatoes.. But this recipe was just so simple and fool proof! And, as I said, it turned out delicious. I will most certainly be making it agin!!

Soft Chocolate Chip Cookies II

Reviewed: Oct. 30, 2007
Made these cookies this evening and they turned out wonderfully. Made a few minor adjustements-- replaced the shortening with butter.. and instead of 1 and a half cups of choc. chips I did 1 cup chocolate chips and 1/2 a cup Skor Bits. Cookies turned out great! Very chewy. 4 stars instead of 5 because even with less chocolate chips than the recipe calls for, this was a VERY chocolatey cookie. Almost too many. When I make them again (and I will, because they're great), I'll cut back a bit on the chocolate chips. Definitely try improvising a bit with skor bits, though! I am pretty proud of that little stroke of brilliance :)

Cracked Sugar Cookies I

Reviewed: Oct. 27, 2007
The PERFECT sugar cookie. And after they bake they are just too pretty to even *think* about putting icing onto! The only revision I made was rolling the dough in sugar before putting them onto the pan.. Just for apperance purposes.. Although, they would be just as pretty without the twinkle of the added sugar. Fantastic recipe. Very simple. Very quick. PERFECT results.

Cranberry Sauce I

Reviewed: Oct. 27, 2007
I am a young woman and this year was the first year that I cooked thanksgiving dinner on my own. It was really important to me that I do as much of the meal "from scratch" as possible. I had a guest list of about 10 people and all eyes were on me. I am happy to say that the meal turned out FABULOUSLY.. and this cranberry sauce was no exception. Everyone was *amazed* that I made it from scratch. Of course, I didnt tell just just how easy it was. This is *the* perfect cranberry sauce recipe.. very few ingredients, super simple to do, quick to cook, and so *so* tasty. I will definitely be using this one again and again! Thanks!!
