The Best Ricotta Pancakes

I've had excellent ricotta pancakes in the past (at a favourite brunch place in San Francisco) & I was really hoping that these would compare... but unfortunately they missed the mark. The only alteration to the recipe I made was adding a tsp of vanilla paste. Over all, they were okay. Edible, for sure. But the consistency was just too gooey for me. I think that if I were to ever make again, I might stick to making really SMALL & thin pancakes.

Italian Sausage, Peppers, and Onions

This was a solid recipe. I followed it almost exactly to the T-- with the exception being that I used spicy italian sausage rather than sweet & I sprinkled with parmesan when serving. It was very simple, but very tasty! We served over plain semolina pasta. My husband wasn't thrilled when he saw me cooking it, but was quick to comment that it was actually really yummy and a very pleasant surprise. This is a fabulous, nutritious, easy weekday meal.

Apple Pie

I have very mixed feelings about this recipe. I really enjoyed the flavour (the lemon zest adds a wonderful special something!)... but it was just so darn RUNNY! I followed the recipe exactly as written, and my pie turned out incredibly soupy. I used golden delicious apples, which are normally wonderful for baking with... Perhaps next time I just need to double the amount of flour the recipe calls for?

Sandra's Butter Tarts

This was just okay for me. To save on time, I used frozen/prepared mini tart shells. I then followed the recipe exactly, and found it be a bit bland. Perhaps this is best used as a 'base' recipe, to which you would add your own raisins and/or walnuts? As is, it just misses the mark. I wouldn't rule out this recipe in the future, however if/when I make again, I will certainly try adding some extra goodies to jazz it up. Tip:: Pop the shells into the oven for 5 minutes or so BEFORE filling them, so that the shells can get a bit of extra cooking time (they'll need it).

Fish Tacos

I do not own a deep frier, so I fried our fish (mahi mahi) in a pan with about 1/2 inch of vegetable oil and the results were FABULOUS. I had never attempted fried fish tacos at home before, and have to admit that I was a bit nervous… but I was so pleased with the results! Even my husband who swears up and down that he doesn't like fish, loved these. He ate SIX! A few tips:: I added some seasoning to the batter itself to kick up the flavour a bit. Just some cumin, cayenne, salt and pepper. You could really jazz it up however you like. The fish was really tasty and could easily have been eaten on its own.

World's Best Lasagna

Yum!! I used spicy italian sausage rather than sweet, and I think that it's what made this recipe. So, so, so good. And even better the next day after the flavours have had all night to mingle :)

Black Magic Cake

This was the first time that I EVER made a cake from scratch! I was really nervous going in, but ultimately was blown away by how easy it was… and how tasty the final product is! Word to the wise-- The batter, before baking, is VERY thin. Don't be alarmed!! It will bake up into a wonderfully fluffy, decadent chocolate cake. This cake is quite airy and fluffy--- if you're looking for a more dense, hearty cake this recipe is not for you.

Nope. I followed this recipe exactly and it absolutely DID NOT come together. I even chilled the concoction in the fridge overnight and, still, it was just goo (firm goo, but goo none-the-less). Maybe I didn't cook it all for long enough?

Sweet, Sticky and Spicy Chicken

Liked this very much! Though, I would advise to also follow the advice of reviewers and change the method slightly:: I heated the sauce in a small sauce pan, while sautéing my chicken pieces in a separate pan. When chicken was 3/4 done, I added the heated (and, by that point, thickening) sauce & cooked the chicken the rest of the way like that on low heat. The result was perfectly saucy, sticky, spicy-sweet chicken bites. Super easy too! Absolutely lovely with rice and steamed broccoli. Will definitely make this again ( & again, & again)!

Slow Cooker London Broil

I followed this recipe to the T, and got very good results. All in all an extremely simple, tasty, & tender crockpot recipe. I'm deducting one star though because I think that the flank would really have benefitted from being flipped over at least once during cooking (the top side, got a bit dried out). Also, next time I will follow the advice from other reviews and add some chopped up onion and probably a couple of dashes of worchestershire. Over all though, even as-is, this is a solid recipe.

Sausage Pasta

I am generally more of a 'creamy sauce' fan, but I have to say…. I am so glad that I stepped out of my comfort zone a bit and tried this recipe. It was wonderful! Super simple & quick, but the flavours are absolutely fantastic. I followed the recipe almost exactly, with the exception of adding just a touch of salt.

Chocolate Zucchini Cake III

Wow. Amazing cake! Dense, moist, and incredibly delicious. My husband said it was the "best cake ever" and this is a man who says that cake is his favourite food-- so it's tall praise! I did end up making a few adjustments… - Cut back on the sugar by 1/2 a cup - Cut back on the oil by 1/4th of a cup - Omitted the cinnamon & walnuts completely - Added about half a cup of shredded coconut. Watch your baking time. The recipe says 50 minutes, but ours was done in about 30 min. I will absolutely be making this again. And again. And again!

Chocolate Eclair Dessert

This was alright, but not great. I made it thinking that my husband would love it (he loves 'creamy' desserts) but amazingly, it's one that didn't get finished. After a week of it sitting in the fridge, half eaten, it had to be thrown out. My husband and I didn't love the use of canned icing. The top layer became quite sticky & thick after being in the fridge for a day or two. Also, the filling mixture REALLY overpowered the graham crackers. It was all just too sweet, too soggy, and too artificial. Probably won't make it again.

Easy Morning Glory Muffins

My husband has been asking me to make 'Morning Glory' muffins for some time now… Confession:: I had never even heard of them prior to meeting my guy! Finally I decided to try them out. Over all, a very good recipe. Easy & full of fairly healthy ingredients. A great hearty 'breakfast muffin'. One star deducted because I found that the amount of sugar that this recipe calls for it a bit excessive. I reduced to 1 cup.. but could have easily gone down to 3/4 a cup without missing any sweetness. Also, 2 tsp of cinnamon is just not early enough for a muffin that is this hearty. I brought mine up to 3 tsp, and added 1/2 tsp of all spice as well. With those few, basic modifications though, this recipe was a hit. Will definitely make again.

The Best Double Chocolate Chip Cookie

The best double-chocolate cookie I have ever made… and possibly the best chocolate chip cookie PERIOD. Make sure to refrigerate your dough for 1-2 hours at least-- this solves the issue with cookies coming out too flat. Also, increase that cocoa up to 1/2 cup. Fantastic recipe. Will be making again and again.

Chicken Tikka Masala

I have always been intimidated by Indian recipes (even though I love indian food). Tonight I was brave and tried out this recipe and was REALLY impressed. It's super easy, and the results were VERY good. Not as good as some of the better indian restaurants that I have been to…. but waaay better than any of the indian sauces that I've tried out of a jar over the years. I marinated my chicken for a few hours… and also cut WAY back on the salt. 7 teaspoons of salt in this recipe is WAY too much salt!! I used maybe 2 teaspoons altogether and honestly, it was even that a bit too salty! A fabulous recipe. Will definitely made again.

Salisbury Steak

Wow. YUM!! My husband had been requesting 'Salisbury Steak' for a while, but honestly, I didn't really know what it was and it sounded intimidating! Little did I know, it's essentially just a meat-loaf patty smothered in delicious gravy. I followed this recipe, and the few listed changes mentioned by other reviewers, and was really impressed. A VERY yummy dish, and super easy to make. Used ground sirloin, & served with parmesan mashed potatoes & steamed broccoli. Will absolutely be making this again.

Soft Christmas Cookies

The first time I made this recipe, I was not blown away. I would have given it a 3 star review… However, I followed the suggestions of a few other reviewers, make a few tweaks and tried it again… VOILA! 5 stars! 1- melt the butter before mixing with the sugar. 2- 3 cups of flour only. 3- bake for exactly 9 minutes. This results in a cookie that doesn't expand/puff up too much while baking, and retains the shape of your cookie cutter. The cookies, even 3 days later are firm.. yet soft & chewy and not at all crunchy or brittle. LOVE.
