Easy Morning Glory Muffins

My husband has been asking me to make 'Morning Glory' muffins for some time now… Confession:: I had never even heard of them prior to meeting my guy! Finally I decided to try them out. Over all, a very good recipe. Easy & full of fairly healthy ingredients. A great hearty 'breakfast muffin'. One star deducted because I found that the amount of sugar that this recipe calls for it a bit excessive. I reduced to 1 cup.. but could have easily gone down to 3/4 a cup without missing any sweetness. Also, 2 tsp of cinnamon is just not early enough for a muffin that is this hearty. I brought mine up to 3 tsp, and added 1/2 tsp of all spice as well. With those few, basic modifications though, this recipe was a hit. Will definitely make again.

The Best Double Chocolate Chip Cookie

The best double-chocolate cookie I have ever made… and possibly the best chocolate chip cookie PERIOD. Make sure to refrigerate your dough for 1-2 hours at least-- this solves the issue with cookies coming out too flat. Also, increase that cocoa up to 1/2 cup. Fantastic recipe. Will be making again and again.

Chicken Tikka Masala

I have always been intimidated by Indian recipes (even though I love indian food). Tonight I was brave and tried out this recipe and was REALLY impressed. It's super easy, and the results were VERY good. Not as good as some of the better indian restaurants that I have been to…. but waaay better than any of the indian sauces that I've tried out of a jar over the years. I marinated my chicken for a few hours… and also cut WAY back on the salt. 7 teaspoons of salt in this recipe is WAY too much salt!! I used maybe 2 teaspoons altogether and honestly, it was even that a bit too salty! A fabulous recipe. Will definitely made again.

Salisbury Steak

Wow. YUM!! My husband had been requesting 'Salisbury Steak' for a while, but honestly, I didn't really know what it was and it sounded intimidating! Little did I know, it's essentially just a meat-loaf patty smothered in delicious gravy. I followed this recipe, and the few listed changes mentioned by other reviewers, and was really impressed. A VERY yummy dish, and super easy to make. Used ground sirloin, & served with parmesan mashed potatoes & steamed broccoli. Will absolutely be making this again.

Soft Christmas Cookies

The first time I made this recipe, I was not blown away. I would have given it a 3 star review… However, I followed the suggestions of a few other reviewers, make a few tweaks and tried it again… VOILA! 5 stars! 1- melt the butter before mixing with the sugar. 2- 3 cups of flour only. 3- bake for exactly 9 minutes. This results in a cookie that doesn't expand/puff up too much while baking, and retains the shape of your cookie cutter. The cookies, even 3 days later are firm.. yet soft & chewy and not at all crunchy or brittle. LOVE.

No-Bake Chocolate Coconut Cookies

I added an extra cup of coconut for these and used butter instead of margarine... Turned out just like Mom's! Without the extra coconut these would have been too runny, I think. Also, a tip... It's VITAL that you let the butter, sugar & coconut cook together until totally smooth. If you rush it, your cookies will turn out grainy & crumbly. They need cook cook together at a BOIL for at least 2 min. You'll know its ready when the mixture is completely, silky smooth. Also-- stir constantly. The sugar will burn if you stop stirring while cooking, giving your cookies a burnt, icky taste. DON'T STOP STIRRING!

Baked Teriyaki Chicken

Really, really great recipe. SO much better than anything I've ever had out of a bottle. A VERY easy dinner, but packed with flavour. My husband who doesn't typically like 'sweet' sauces on meats really enjoyed this, too. I used boneless chicken breasts which I cut into several large chunks.. Covered with tin foil while baking for 35 minutes at 425 degrees. Also added a squeeze of siraccha to my sauce to give it a bit of spice. Was perfect!

Gumbo Style Chicken Creole

Really, really enjoyed this Gumbo! I think that this recipe is likely best used as a 'base' recipe, to be modified a little bit depending on the tastes of the cook. Personally, I followed the advice of others and made a few alterations/additions: 1. Added one, chopped, smoked sausage coil. 2. Used Cayenne pepper in place of hot sauce. 3. Omitted mushrooms.. but doubled bell peppers. 4. Used 1 can of chicken stock. 5. 20 minutes is not NEARLY enough cook time. I simmered this for 2 hours before serving. It gave the flavours a chance to really develop and deepen. Absolutely divine! I am looking desperately forward to lunch today when I'll get to have it as leftovers… I imagine it'll only be tastier!

Slow Cooker Carnitas

Made this using chicken breast in place of pork, and the results were very good!! I did make a few other modifications as well though... I like things spicy, so I added a small can of diced green chillies, and also some pepper flakes. Served on small flour tortillas with broccoli-slaw. DELICIOUS. The chicken was so moist & flavourful. Absolutely yummy. I could easily just sit down and eat this out of the crock pot with a fork.

Cajun Chicken Pasta

I more or less followed this recipe to a T (omitted the lemon pepper... because I strongly dislike the stuff!) and my notoriously picky husband said that it was the best thing that I have ever made. Really, really good flavour and SUPER easy to make. Will absolutely be making again!

Juicy Peach Crisp

A very good recipe! My husband and I ate this entire tray to ourselves in one day. WOW! I did make a few alterations... I was using very ripe peaches from my own tree, so I halved the amount of white sugar. I figured the peaches would be sweet enough on their own (and I was right). I like quite a bit of crumbly topping, so used 1/2 cup white flour and 1 full cup oatmeal. Fabulous, simple recipe! Will definitely be making this again. Next time I'll probably double (or triple!) it so that it'll last more than 12 hours in our house. DEEEELICIOUS!

Zesty Slow Cooker Chicken Barbecue

This was fabulous! So easy and turned out great. I was skeptical about the Italian Dressing, but it really did add that little special something. The only addition/change I'll make next time is adding some chopped celery & onions to the pot. A little bit of a crunch would be nice :) Will deeeefinitely be making this again.

Tasty Buns

Amazingly easy and amazingly good! I followed one reviewers tips, and made sure to beat the 'dough' for a SOLID 3 minutes (I used my stand-up mixer). I also let these rise for a total of about 45minutes. They came out SUPER fluffy and light. Really really perfect.

Chicken Stir-Fry

This was just alright for me. I basically followed the recipe to the T-- and it was... meh. Not a lot of flavor, in my opinion. I ended up having to add some Sambal Oelek for some kick. It was pretty bland. The next time, I'll definitely make some serious revisions. More soy sauce? Maybe a dash of black-bean sauce? I dunno- *something*.

Easy Pancakes

I followed the other reviewers suggestions, and used two TEAspoons (rather than tbsp) of baking powder. Also added a dash of vanilla & cinnamon. These turned out beautifully. So fluffy and flavourful! A great basic, straightforward and easy pancake recipe. Lovely.

Slow Cooker Chicken and Dumplings

I almost hate to write a review for a recipe that I changed SO much... But I am going to go ahead and do it anyway. Firstly-- I used Cream of Mushroom because it's all we had. Secondly, I added diced carrots & celery... and a little poultry seasoning, salt & pepper. I just couldn't bear for the only Veg to be onions. Oh- and I used just one can of biscuit dough... I have a 5 qt Crockpot, and one can did the job. The biscuits needed an HOUR to cook through. In total, I cooked this for 6.5hrs. In verdict? DELICIOUS!!! I'd give it 5 stars if the original recipe included my revisions, hah. Very filling and comforting. This will definitely be made again.

Seasoned Turkey Burgers

Incredible, packed with flavor and DELICIOUS! I used extra lean ground (Jennie-O) turkey, and cooked on my Foreman grill for 5 minutes. They turned out very moist. So, so good.

Sarah's Banana Bread Muffins

I followed the recipe almost exactly to a tee-- except I added some chocolate chips at the end (what can I say, Momma needs her chocolate). The muffins were good.. but not GREAT. They weren't the moistest or most flavorful muffins ever. I don't know if it was due to the white sugar (instead of brown) or lack of vanilla/cinnamon.. but they came out being pretty.. well, average. With that said- I think they'd be a great recipe if making with children. The limited ingredients and straight forward directions make it perfect for beginner bakers!
