Colorado Green Chili (Chile Verde)

I like this, the boyfriend REALLY liked it. We're having leftovers tomorrow. I put in 2 cups broth and it was still extremely liquidy like soup though. And the cubed meat we bought was cubed pork chops, not the best... Pork shoulder cut into cubes would have been 100% better but I bought what my grocery store offered that I could make in a timely manner, on a weeknight. To make it the best, it would have taken a lot longer and I didn't have that kind of time tonight. I will try again with pork shoulder. Thank you.

Quick and Easy Tuna Casserole

This is a great weeknight meal, it's quick and easy and tasty! I make it about once a month. I omit the onion and I replace processed cheese with shredded cheese of any sort. American cheese tastes disgusting to me. I throw in a lil cottage cheese too, maybe a half cup or a lil more. A little milk keeps it moist, can't go wrong there either. And oh wait, no oven here. I mix it all up and throw it covered, in the oven for 30 minutes.

I've had this EXACT dish at a Mexican restaurant in Madison Mississippi. I've been a Californian for 16 years and lived in Mississippi for 2 years. Let me tell you, the Mexican food here, differs by a ton! The food here is just more authentic, yada yada...BUT, I have to say, I tried that Molcajete once and I was hooked for life! Now I can't find anywhere in California that serves em, so I'm glad to have stumbled upon the recipe myself and find out how awesome it was, exactly like the one in MS!! Thanks Herdez :)

Great recipe, thank you! 3 changes...Omit orange juice, add 1 - 8 ounce can tomato sauce added, along with 1 can Italian diced tomatoes with garlic and olive oil instead of the regular kind. Oh yeah, I added a few spices, crushed red pepper flakes, pepper, seasoned salt, garlic powder, oregano, Italian seasoning, parsley flakes and way less rosemary. It tasted like my mom's, which I haven't been able to have for many, many years. But, I remember folks, and it's yummy! ;)

Slow Cooker Chicken and Dumplings

I thought this was good I have tasted some from a nice lady who was born and raised in Mississippi and hers was different, in a better kinda way which I doubt I will find again. This will do, I am gonna look for better biscuits than Grand's though because those weren't what I'd hoped for either. Oh and I added chicken broth instead of water to cover the chicken, maybe some milk too next time...? Will keep toying with this to make it 5 stars. Thank you for the recipe. :)

Mozzarella-Stuffed Pesto Turkey Meatballs

Made this for dinner last night without the mozzerella cheese filling in the middle. I stirred in a handful of fresh parmesean instead. It was great!! Everyone was impressed and ate their entire plate. I will make this again tons of times, I'm sure. Thank you! :)

Whit's Chicken Enchiladas

Ok Ok, I changed two things because of what I had on hand. Instead of the cream cheese, I used sour cream all the way and instead f the heavy cream, I used milk. Can't say I'm sorry the extra calories are not entering my mouth. The recipe is bland and I even added spinach to it. I'm having to salt each bite as I type.
