Tater Tot Casserole
My great grandmother used to make this and has passed on the recipe to me. I now make it with ground turkey and cream of chicken and cream of celery soups. I have never put ketchup in it or worcestershire sauce either. I do however put 2 cans of drained green beans. I use part of the green bean juice to dilute the soup enough to pour over the meat and beans, then I arrange the tater tots on top so it is all totally covered. My mother-in-law has also passed on this recipe, but she uses a can of tomato soup and then my husband likes to put ketchup on it after it is served. Both ways are yummy, but I prefer the cream soup version. It is a true comfort food to me!!!

Oaxacan Tacos
These are my new favorite mexican food. I got a recipe very similar to this from my sister, who got it from her Mexican neighbors. I cut the steak into little cubes and brown it with season salt, lime and granulated garlic. I serve it on the softened tortillas with diced sweet onion, cilantro, shredded cabbage and a squeeze of lime. My 11 year old son can't get enough of them. He ate 6 of them. I will be making a huge batch for a family get together with mexican rice and black beans. Yummy!

Easy Mini Quiches
I have made these mini quiche as an appetizer at least 5 times and have always gotten rave reviews. They may not be a true quiche, but they are very tasty. I have made different flavors by changing the meat or cheese. I have a teenage daughter that does not eat pork, so I usually make these with turkey bacon & swiss cheese. I will be making them for an appetizer for her birthday in a few days and plan on making the turkey bacon/swiss and using turkey ham diced with sharp cheddar. Very yummy!!!
