Granola Bars III

I really like this recipe. Very easy and a healthy alternative to store-bought granola bars! Instead of wheat germ I used Ground Flax Seed and Hemp Hearts and Craisins in place of raisins as well as almonds instead of walnuts. I also took the advice from another reviewer and added 1/2 the amount of oil replacing the other half with applesauce. Next time I will remove the oil all together and strictly use applesauce.

Cranberry Pecan Salad

A nice easy but delicious green salad! I followed the advice of other reviews and tossed the pecans with some butter and brown sugar in a pan. I used a raspberry vinegar that I made and didn't find it to be bitter at all. I also only used 4 tbsp of olive oil and added a splash of lemon juice. I will definately be making this one again!

Best Lasagna

I have never enjoyed my lasagnas before but this was perfect! Here are my changes: I sauteed onion, garlic, mushrooms and celery then added a 540 ml can of diced tomatoes, tomato soup and a can of tomato paste. Then I added my ground beef and cooked (I like to cook the ground beef in the tomato sauce so that it is more moist and tender). I mixed together the ricotta cheese and a package of frozen spinach. I layered the meat sauce, lasagna noodles then more meat sauce followed with the noodles then added a layer of the cheese and spinach mix and topped it with the zucchini slices, noodles, meat sauce and Kraft Italiano Shreeded cheese. Very Yummy!

Slow Cooker Italian Moose Roast Sandwiches

This is an excellent recipe for moose that I will be sure to use over and over again! I am not a big fan of moose so I wasn't really looking forward to it but this was really delicious. I didn't have any bouillon cubes so I just sprinkled some of the powder over top and I loved the pepperoncini flavour!

Pecan Chicken Breasts Stuffed with Cream Cheese and Broccoli

This recipe got rave reviews from all of my company! I used boneless, skinless chicken thighs instead of the breasts. I think these might even work better than breasts because they are already folded in half when you purchase them. I unfolded them and pounded them flat so they would be easier to roll. For the filling I noticed alot of the reviews complained there was not enough flavour. I added some chopped up bacon and instead of pimentos I used about 1/4 cup of sundried tomatoes and then threw in a whole bunch of seasonings and spices. I also only used a minimal amout of butter. I coated the chicken in the pecans and crushed up soda crackers instead of bread crumbs. I skipped the pan fry part and opted to just bake them in the oven. I prepared the filling in the morning and let it cool in the fridge for most of the day, this way I really didn't feel that it was all that time consuming! My general belief is that a recipe only provides a guideline and it is up to you to make it great! I would definately make this chicken again.
