Sweet Corn Cakes

This recipe is delish. I substitued a box of Jiffy corn muffin mix for the cornmeal and masa flour but the muffin mix amounted to 1 1/2 cups so I used a can of creamed corn instead of frozen. Also replaced the cream with eggnog. Baked it like the recipe said for about an hour and it turned out beautifully.

Caldo de Res (Mexican Beef Soup)

My family and I absolutely loved this dish! we just used kernel corn to make it easier to eat while hot. we also used a couple more chayotes cause we love squash. as is said in hawaii 'broke da mouth'

Crunchy Chicken Fingers

lack of seasonings = bland. try seasoning the chicken with salt, pepper, onion powder, and garlic powder. Try panko (Japanese bread crumbs) instead of chips.

Caramelized Baked Chicken

Tastes a lot like huli huli chicken. Thickened the sauce with some cornstarch and basted chicken on the grill. Excellent!

Orange Cream Fruit Salad

I took the advice of other reviews and drained the fruit overnight in the fridge. Also some people said there was way too much sauce,and it does seem like it at first while it's all liquidy, but actually it was just right. I put the whole thing together the night before our party and the sauce thickened up nicely so that it wasn't too saucy. Plus by the time you add the last minute fruits (nanas, apples) that takes up the extra sauce. It doesn't look like a lot when done but the recipe as-is was enough for the 16 people, although mostly kids, we fed.

Sirloin Tips and Mushrooms

The sirloin tips ended up being tough in the 30 minutes and tasted bland. The sauce didn't taste right. Seemed like the red wine didn't belong or there needed to be herbs added to tame the red wine sourness. I added beef broth and a bit of tomato paste to save it but that didn't help much. Probably would have been better to grill the sirloin and make the sauce seperately and also tweak the sauce, then add the meat just before serving.

French Bread Rolls to Die For

It's true, these are "to die for". I did take the advice of others and added about 1 1/2 tsp of honey to the proof mixture. I'm at high altitude and for me it took 3 1/2 cups bread flour and I also lowered the heat to 375 and they came out fine. Didn't change the other ingredients. Baked until the tops were light brown then brushed with butter then put back in oven a few more minutes to a nice golden brown. The crust was crisp and the inside was chewy as advertised. These were perfect with the easy french dip recipe. Too bad it didn't turn out for one of the reviewers. Avoid terry cloth towels, they will stick to rising dough (i've made that mistake) and flatten your buns. If you bake flattened dough it will be hard like cookies (my sister in law did that and yes the rolls were bricks) Use linen type kitchen towels, they work better

Easy Slow Cooker French Dip

A Very comforting dish! I didn't have a beer so I used broth in its place. As someone suggested I added 2 TB kitchen bouquet and a little more salt. It was very good.

Grilled Delmonico Steaks

Definitely the most tender and delicious recipe for steak. I didn't use salt and pepper. Followed the rest of the ingredients exactly, lightly pricked the meat with a fork and marinated 3 hours. Cooked medium rare and it was still juicy.

Linguine with Clam Sauce

I took another reviewers advice and used lots more garlic and thickened the sauce with parmesan cheese. Besides that I followed the rest of the recipe. It tasted just like what you would get at red lobster.
