Hello there. My name is Joyce and I live in Florida. I have three children ages 22, 17, and 13. I love cooking for friends and family. I especially love cooking at the holidays and having everyone over to our home. I enjoy making new recipes from allrecipes and sharing with others. I also LOVE using my crockpot! This is indeed my favorite recipe site.
My favorite things to cook
I would say my all time favorite food to eat and cook is eggplant parmegiana. My neighbor grows fresh eggplant and I cook the parmegiana. We all have dinner together and enjoy one anothers company.
My favorite family cooking traditions
My daughters tell me that they love holiday cooking with me. We always spend quality time cooking, laughing, and sharing stories while making delicious holiday meals together.
My cooking triumphs
I am very proud to say that I just made chicken and dumplings for the first time this week and it was fabulous! I was so happy to have found the recipe here and try it. I was getting over a flu and did'nt want to buy canned chicken soup. The leftovers were even better the next few days after making it!
My cooking tragedies
I tried making barbeque ribs in my crockpot as I am not the best grill cook. This was a complete disaster but my three chihuahuas just loved them! : )

Sopapilla Cheesecake Pie
I just finished baking and cooling these AMAZING Sopapilla cheesecake squares. I was searching for a Mexican desert to make for my classroom Mexican Fiesta tomorrow. The only part of the recipe I changed was using regular vanilla extract since I wasn't able to find Mexican at my store. This was so simple to prepare and tastes so delicious! I chose to use lowfat cream cheese and lowfat crescent rolls. This has to be my very favorite desert recipe on this site! Thank you very much CandelB! I look forward to bringing them to our Fiesta!

Turkey Veggie Meatloaf Cups
We make turkey meatloaf, meatballs, and burgers at least once a week. I was looking for a recipe that was slightly different then what I normally make. I used 3 lbs of ground turkey, 1l arge Red bell pepper, 1 large green bell pepper, 1 large vidalia onion, 4 cloves garlic minced,6 Tbs Worcestershire sauce, 3 Tbs Dijon, 3 eggs, 2 cups italian seasoned breadcrumbs, 1/4 cup olive oil(did not have couscous or zucchini on hand) and topped each large meatloaf muffin with a squeeze of Bulls-Eye Kansas City barbeque sauce. It made 23 delicious meatloaf cupcakes. They reached 160 degrees in 18 minutes on 400 degrees oven. The entire family raved about these and they had a completely different flavor than what I normally make. Thank you for the wonderful recipe!

Unbelievably Awesome Barbeque Chicken Pizza
I have never eaten a barbeque chicken pizza before. I had left overs from Zesty Slow Cooker Chicken from this site. I rolled out my dough to fit in my largest cast iron skillet. Greased the pan with olive oil and sprinkled corn meal over that. Pre cooked my pizza dough on 400 for 15 minutes. I mixed 1/4 c barbeque sauce with 3/4 c marinara sauce. Topped with mozzerella cheese and then added the chicken. Added diced green bell pepper and pineapple tidbits. Added some more cheese on top of that and sprinkled on some dried cilantro. I did brush my crust with olive oil and garlic powder. I baked an additional 25 minutes at 400. This smelled great, looked great, and tasted amazing. I would have never thought to use up my barbeque chicken left overs on a pizza if it were not for finding this recipe. In the future I will make it just like the original when I don't have the leftover chicken. Thank you so much for the inspiration!
