Sicilian Ricotta Cheesecake

Absolutely amazing! Not too sweet, lovely texture. Nice and dense. I used 1 1/2 tsp orange zest and 1 1/2 tsp of lemon zest. I did try 3 tsp of amaretto, but think I will less or none next time; the citrus flavor would definitely be enough. Yes, please drain the ricotta (then one can use 6 eggs).

Garden Pasta Salad

Delicious Chicken Casserole

This was really good! But, I have completely changed it since. I like to make my own cream of chicken soup (not as hard as you would think, very easy) and use fresh onions and garlic. I also add some carrots and mushrooms and herbs.

Spaghetti Chicken Casserole

Excellent! I did only used 2 cups of chicken and I made my own cream of mushroom soup: 1 cup mushrooms sauteed in 3 T butter, add 3 T flour, stir for 1 minute. Add 1 cup chicken stock, 1 cup milk. Cook until a bit thickened. I added the cheese to this. I also added thyme, sage and a bit of basil.

Absolutely delectable. My family loves it! Its a bit sweet, we cut the sugar down to 1/3 cup. I also use 1/2 cup melted unsalted butter instead of veg oil and 1 cup ww flour, 1 cup white.

This is loved by my whole family! I do cut out the nuts sometimes and add 1 cup buckwheat groats, 1 cup crisped rice, 1 cup pumpkin seeds for fun, but its wonderful as it is!

Sweet and Mild Cooked Tomato Salsa

This was awesome! I cut the sugar in half, used canned tomatoes (it's winter in the midwest), 1 tablespoon of vinegar and only cooked it for 30 minutes. Pulsed it with a soup blender. I will definitely try it with fresh tomatoes this summer!

Jesse and Steve's Fresh Strawberry Cake

I've made this for multiple birthday parties and have received rave reviews and recipe requests! I do puree the strawberries since my kids don't like fruit pieces. I also make a strawberry cream cheese frosting with extra pureed strawberries. It has turned out perfectly every time. Awesome!

Oatmeal and Applesauce Pancakes

These were wonderful! My 3 and 1 year olds loved them, as did I! I only made a half recipe, but used one whole egg, creme fraiche instead of sour cream, and 1/2 ww flour. I think using double the eggs made them much fluffier. They weren't very heavy. I did find that cooking them slightly longer and not so hot, maybe around medium heat, did the job, They were still moist in the center, but not undercooked. We will definitely make them again!
