Jalapeno Hummus

Reviewed: Jan. 29, 2011
The base recipe is a little bland to our taste, but is a good start. We did the following to spice it up a bit and feel it could use even more: 1 tsp curry 1 tsp cumin 1/4 tsp cayenne 1/2 tsp salt 4 cloves garlic 4 tbsp lemon juice 1/4 cup fresh cilantro

Jambalaya

Reviewed: May 1, 2010
Great base for a recipe. I say that, because there were a lot of things I substituted. I used vegetable oil instead of peanut oil. I used 1.25lbs of Spicy Turkey Sausage as my meat. No celery. Two 15oz. cans of diced tomatoes (drained half the juice) instead of Italian Crushed. I did not use hot pepper sauce or file powder. I did, however, add a 1/4 tsp. Cayenne and a bay leaf. Came out awesome with just the right spice (some of which I attribute to the sausage).

Carol's Arroz Con Pollo

Reviewed: Apr. 18, 2010
Exactly what I was looking for to use up my leftover chicken! I only used half a green pepper, substituted Spanish Paprika, added 1/2 cup of frozen corn and added 1/8 tsp of cayenne for a little tingle on the lips :)

Chicken Vegetable Barley Soup

Reviewed: Mar. 20, 2009
I loved this recipe - it made for a nice belly warmer. Unfortunately, I don't think it freezes so well, due to the barley.

Fiery Fish Tacos with Crunchy Corn Salsa

Reviewed: Nov. 21, 2007
I've made this twice now. The Corn Salsa really makes this dish, however I have yet to use jicama. There is too much seasoning for my preference. I cut the cayenne in half the first time and it was still too overpowering. This time I cut the cayenne some more and only used half the salt. Turned out just how I like it. For the 6 fillets I used: 1/4 teaspoon cayenne pepper 1 tablespoon ground black pepper 1 tablespoon salt I added some diced Mango as a topping, which turned out to be yummy!

Microwave Tacos

Reviewed: Nov. 10, 2007
Like the first reviewer, DAVIDNKATE, I was looking for a replacement to the taco packet seasoning. I also make this recipe over the stove with ground turkey. I've been known to throw in a clove or two of garlic as well. It's turned out very tasty each time.

Oatie Chip Cookies

Reviewed: Nov. 10, 2007
Great cookies - they will become a regular. I added 1/4 cup of ungrounded oats just because I like a chewy, whole oat every once in a while :)

Jammin' Tarheel Chili

Reviewed: Oct. 26, 2007
I really like the base of this recipe. I made the following changes for my own taste. Bob Evans Zesty Hot Roll Sausage instead of beef. No mushrooms. Done with and without beer and didn't really notice a difference either way. 1 cup Frozen Corn. 1 teaspoon of cayenne pepper was enough heat.
