Mom's Buttermilk Pancakes

Reviewed: Apr. 18, 2011
This original recipe was super good just the way it was, but I wanted to see if I could substitute to make it a little healthier. Used 1/2 cup whole wheat flour and 1/2 cup all-purpose flour. I only had 3 medium ones with lite syrup and it was very delicious and filling. This is the only way I will make pancakes from now on! FYI Note: Not only do the ingredients on pancake mixes read like an elaborate science experiment (not healthy!), but if used after expiration, it has been known to make people extremely sick!

Not as decadent as some brownies, but it has a healthy twist. Very yummy!

Cranberry, Apple, and Fresh Ginger Chutney

Reviewed: Jan. 1, 2010
I loved this! Nice change from regular store bought cranberry sauce. Now that the canned stuff has High Fructose Corn Syrup (like all food manufactured in the US these days!), I'll be making my own cranberry relishes, sauces, and chutneys. This is a keeper!

Sicilian Ricotta Cheesecake

Reviewed: Jan. 1, 2010
Not too heavy or sweet. Used lemon zest instead of orange. Used Part Skim ricotta and did not drain liquid from ricotta. This is almost as good as my Italian mom's cake. Got compliments from my guests. Thanks Nicole!

Italian Spaghetti Sauce with Meatballs

Reviewed: Oct. 2, 2009
I made some minor changes to this excellent recipe. I used fresh parsley in meatballs and sauce. Used 1 cup of milk for breadcrumbs to soak in before adding to the meatball mix. Rolled my meatballs in breadcrumbs before placing in 350 degree oven for 25 minutes. When I took cooked meatballs from oven, I addedto sauce and let it cook for 2 hours on low heat. So Good!

Spicy Chicken Breasts

Reviewed: Aug. 24, 2009
Loved this! Just the right amount of heat for me (I don't like things too spicy), and my husband (he loves spicy foods). Perfect middle of the road for us both. Will make regularly.

Won't make this again. Not what me and my family find appetizing and house smells afterwards...

Roasted Roma Tomatoes and Garlic

Reviewed: Jul. 26, 2009
Outstanding flavor with most tomato varieties! Have made this numerous times with different kinds of tomatoes. This time I used small Campari tomatoes (larger than Cherry, but smaller than Plum). Placed tomato halves (seeds side up) on jelly roll pan lined with non-stick foil. Placed torn pieces of fresh basil leaves on each tomato half. Sliced medium yellow onion and only 5 cloves of crushed garlic cloves then tossed in with tomato halves. Olive oil prinkled liberally over tomatoes, onions and garlic. 400 degree pre-heated oven for only 30 minutes.

Red Potato Chicken

Reviewed: Jul. 23, 2009
Marinated chicken in dressing for 2 hours in fridge prior to placing in oven. Placed chicken on top of potatoes. Added zucchini, onions. I've had better and will probably not make again, because I'm not a big fan of that dressing taste.

Spicy Garlic Lime Chicken

Reviewed: Jul. 22, 2009
This was perfect, and we can't wait to make again. Started the chicken in pan on stove, but DH was late coming home from work, so I put in 300 degree oven for 15 minutes and turned to "WARM" setting for another 15 minutes. I thought it would be dried out, but chicken breasts were extremely juicy and flavorful.

Tater-Dipped Eggplant

Reviewed: Jul. 21, 2009
My husband is not a fan of eggplant, but loved this. I only used 2 T butter and it was still a little greasy for my taste. I will try again next time with olive oil. Also, added some breadcrumbs and garlic powder to mashed potato flakes.
