Famous Pork Chops

I used half of the butter called for and this dish was still very good. I followed others advice and uncovered the dish for the last 15 min of baking and used only 2 eggs. I did rub some pork chop spice on the chops before I coated them in the egg and cracker mix, and also seasoned the chops themselves after they were coated rather then seasoning the cracker mix. I baked them along with the roasted brussels sprouts (also from this site), and they were both ready at the same time. The pork chops were nice and juicy - I can't see why I would make them any other way from now on! **** UPDATE: I made these without eggs completely (I had run out) and they were still great. Since the recipe calls for baking instead of frying, the topping stayed on even without the eggs.

Sausage Gravy I

This was very good and very easy to make - I used only 2 cups of milk and 1/2 lb of sausage to scale it down a bit and it was enough gravy for me and my husband to have it for two breakfasts in a row. Also, I did not have bacon grease so I used 2 tbsp of butter and I did not add any salt (sausage was salty enough for our taste). We made it to go over JP's Big Daddy biscuits (from this site) and it made for a great breakfast. I will never buy the gravy mix from the store again. :)

Roasted Brussels Sprouts

This is THE ABSOLUTE BEST way to prepare brussels sprouts! I used frozen baby sprouts that I steamed in the microwave for 2 minutes first, then sliced in half. I roasted them in a mixture of olive oil and butter in a cast iron skillet. No extra spices, just a little salt and pepper - I will never make them any other way.

Quick and Easy Pizza Crust

Dough was very easy to work with and came out great! I followed others advice and added some spices to the dough and let it rise for 30 minutes. will definitely make this again. I think next time I will try pizza on the grill!

Super Soup

Wonderful recipe to experiment with - I used leftover turkey from Christmas, and 1 15oz can each of chicken broth and water instead of the 4 cups of water. Also, I did not have all of the veggie ingredients, so I used what I had in the freezer: mixed veggies for soup that included okra, corn, green beans, potatoes, tomatoes, and lima beans among other things. I used 1 can each of cream of chicken and cream of celery (to make up for the lack of actualy celery), and also added 1/2 cup of brown rice and some Old Bay Seasoning. I cooked and stirred until the rice was done, adding almost a second can of chicken broth to keep it soup-like. Had the leftovers the next day in homemade turkey pot pie (suggested by another reviewer) Thank you for this really good recipe for me to play with!

J.P.'s Big Daddy Biscuits

I know this recipe doesn't need any more reviews, but I just HAD to say something! These biscuits were the best I've tried, and so easy. I did end up using an entire cup of milk, but that may be because I live in a dry climate. Also, I used unsalted butter instead of shortening. The dough was easy to handle, I did not roll it out, but patted it and used a juice glass dipped in flour to cut them. I also baked them in a cast iron skillet so they were touching each other. Bread Machine Bagels

My first attempt at bagels and they came out great! I followed some other reviewers and added 1/4 of a cup more water to the bread machine, replaced 1 cup of bread flour with whole wheat, and let the bagels rise for 30 mins after shaping them. I definitely will not be winning any bagel shaping contests, but they taste great!

Mongolian Strawberry-Orange Juice Smoothie

Good base smoothie recipe, although I made quite a few changes: I doubled the recipe, using 2C orange juice, 1C each frozen strawberries and peaches (no sugar added), 1T honey instead of the sugar, omitted the ice cubes, and added 1 banana. Blended up easily, and was slightly tart. Think it would be good with yogurt or ice cream added, or with other fruits too (kiwi, blue berries, etc.) Wonderful recipe to experiment with! Thanks!

Strawberry Oatmeal Breakfast Smoothie

I substituted Carb Countdown 2% milk for the soy milk, omitted the sugar and vanilla and added 1 tsp honey instead. I also used 1/2 frozen strawberries and 1/2 frozen peaches and ground the oatmeal first. My husband & I really liked this recipe, and will have this in the AM when time is short. Very filling, and I can see experimenting with the fruit and liquid.

Awesomely Easy Sesame Asparagus

Very quick and easy although I did tweek it a bit (of course). I brushed the asparagus with olive oil and then sprinkled it with a little salt, regular (untoasted) sesame seeds (didn't want to take the time to toast them, I know, busy, busy, busy), and a little lemon juice. Then I grilled them in a preheated grill over indirect heat. It took about 4 minutes. Served this with grilled salmon and grilled potato wedges - awesome!

Strawberry Pretzel Pie

I would use more pretzels and crush them finer, it seemed like a lot of butter in the crust, and it broke apart somewhat when I spread the cream cheese mixture on top. Also, there's no need to chill the jello mixture, the frozen strawberries cooled it down quickly, and you want to put it on top while it is still pourable, of the top looks like strawberry jam instead of jello. I still tasted wonderful though, everyone at work loved it. I used a bag of mixed berries instead of strawberries and used raspberry jello since that's what I had in the house. GREAT!
