Honey Baked Chicken II

This is pretty similar to the recipe I use, I cook 4 chicken legs with 1/3 c honey, 2 T butter, 1.5 t curry, 1T mustard, and 1 t salt. really good served with rice and steamed mixed veggies

Overnight Blueberry French Toast

I made this today for my 1 year anniversary brunch. I cut the recipe in half because it's just the two of us. I made some changes to suit it more to our tastes. I used regular storebrand wheat bread, it's what I had on hand, used 5 eggs, almost tripled the berries-1.5c (we just went to a pick your own and have a ton of berries), and used about 3oz of cream cheese. I sliced the cheese into very thin slices and spread it around so it was uniformly over the bread. I also added a couple of dashes of cinnamon and nutmeg to the egg mixture. I put it into an 8x8 pan and let it sit overnight baked as prescribed \ the next morning. The cooking time was pretty accurate. For the sauce I made the full amount but cut the sugar and cornstarch in half. I forgot the butter but I don't think it needed it, maybe a squeeze of lemon juice. I also made some whipped cream (1/2 c heavy whipping cream, 1.5 T confectioners sugar, and a 1/4 t of vanilla extract) whipped with hand mixer until stiff peaks formed. I didn't pour the sauce all over the pan, but just put it on the individual serving, then topped with the cream. The results were amazing, It was crispy/crunchy on top, moist in the middle and not soggy at all! I served it with bacon and hot tea. Presentation was beautiful. My husband was really excited once it was on his plate. I'll definately make it again. Next time I'd like to try it with challah and see if it makes a difference.

Kentucky Butter Cake

I made this as a giant cupcake for my daughter's first birthday and it was a hit! My brothers all said it's the best cake they've ever had...I think I'm going to make another one soon, with a fruit filling

Pesto Chicken Florentine

I wanted something easy for entertaining guests so I modified this recipe to make it a one pot meal. First I cooked the pasta in a stockpot, drained and placed the pasta in a serving dish. Next I used the same stock pot to cook up 2 slices of bacon, I removed the bacon and put it on paper towel to drain. I sauted about a 1/4 c of onions in about 2 T of the bacon grease. I then added the chicken ( 2 breasts) cooked until almost done and added the spinach ( 10oz bag) Finally I added a jar of garlic Alfredo sauce and a whole jar (4oz) of pesto. I served up the pasta and poured the chicken/spinach mixture on top and garnished with bacon. I served up with some garlic bread and a salad. Everyone raved about it. This is definitely a keeper!!

Chewy Coconut Cookies

I had a bag of sweetend coconut(7oz) that I needed to use up and I'm sooo glad I came across this recipe. I made the recipe as is but added 1/2 t baking powder b/c I like thicker cookies. I also added chopped cranraisins to half the cookies and drizzled them with chocolate. really good chewy cookies!

Slow Cooker Carnitas

We added some pinto beans to the bottom of the slow cooker and upped the broth to 32 oz, also tripled the seasonings per reviewer comments. Came out really well, we made them into some burritos with the beans, mexican rice, mango salsa, avacados and cheese. Never had carnitas so I can't vouch for the authenticity of the recipe but it was yummy either way!

Meatball Nirvana

Made the recipe with 1lb ground beef and 1lb ground veal, 1 egg instead of the milk and upped the italian seasoning b/c my bread crumbs were plain. Hubby liked it, Made some mini for my daughter too. good recipe that can be played around with

Indian Chicken Curry II

I really liked thisrecipe and thing it's a good base recipe that can be played around with. I changed the recipe some because of the ingredients I had on hand and will probably try it again next time with the listed ingredients. This time I used a little less cinnamon, ground ginger, no sugar (seemed a little off for me) 3 chicken breasts, 2 T of tomato paste, 2 T sour cream in place of yogurt (also used a whole can of coconut milk) and crushed pepper instead of cayenne. Hubby thought it was great and my 10 month old gobbled it right up! I served with Jasmine rice and garlic naan.

Mexican Rice

I made this almost exactly as written but without the salt (wanted my 8 month old to have some) and using strands of saffron b/c I didn't know there were different types. I also used red peppers instead of green b/c it was what I had. It was pretty good. so far the best spanish rice I've made but I know others that have been better. Will make again

Tasty Lentil Tacos

during college I came across this recipe and used just taco seasoning b/c it was what I had and it was pretty good but tonight I followed the recipe and loved the result so much more! I served these with the mexican rice recipe on this website and I couldn't have been happier. My 8 month old daughter loved it too!

Chicken Florentine Casserole

Made this tonight with a few variations. I was short on time so I chopped the chicken and sauteed it till cooked, took it out of the pan and made the sauce as directed. I used milk because it was what I had. I only used one can of spinach b/c hubby doesn't like it, I didn't have any bacon and used slices of mozzarella to top.This turned out really well for a last minute idea. hubby couldn't taste the spinach & didn't notice the mushrooms b/c I chopped them up. I served it with whole wheat rotini. I'll keep this in the rotation

Ultimate Potato Soup

My little brother was wary when he saw the recipe name was for the "ultimate" potato soup but after he had it he couldn't deny it was pretty much the ultimate soup. Makes a ton of soup. I added some cooked bacon to the soup and left some over to top off the soup with cheese. have made it at least 5 times already :-)
