Disappointed. Yes you definitely have to cook the syrup down but I think this needs a savory flavor to go along with it, say some sea salt?

Green Hot Sauce (Salsa Verde)

This one is a bit hot for me. I did not remove seeds and membranes from serranos, maybe I will the next time. Instructions say to add water to just cover. This is too much water. I had to cook it down for an hour to reduce volume because it was way too watery. Good learning experience.

Cinnamon is an interesting twist to this, I liked it. Will reduce the tomato sauce by 1 can next time, it made the dish too "soupy". Plan to double the amount of mustard.

Poblano Chicken Enchilada Casserole

Really quite good! Not hot a my wife was concerned but a balanced mixture of flavors. I would even use more poblanos and maybe another jalapeno to amp it up a bit. Great recipe that can be tweaked to meet individual tastes.

A little messy to make, it was almost too soupy for the burgers to hold together. I think you need to cut back on ketchup, dice the onion instead of grating it.

A kickin' great recipe! I had to use poblanos, the only fresh chili's in my area. It is a little soupy but that can be remedied by draining before serving. I would like to try this recipe with habaneros and some chili powder next time. Makes an ample amount.
