Best Spanish Rice

I had tried one other Spanish Rice recipe from here that wasn't good. This one ROCKS! We had a spicy salsa so our rice had some 'heat' to it. Very good! This is the one I'll use from now on.

Lana's Sweet and Sour Meatballs

This is now in the top 3 on my list of favorite recipes. It was so good, it'll make ya' want to slap your grandma! I only made half of the amount of meatballs, as I only had 1 lb. ground beef, but the sauce I kept as written. Omitted the bell peppers, I didn't have any. We ate this over a bed of rice. A keeper for sure!

Turkey Lo Mein

This was really good. Made me hungry for egg rolls. I used some chow mien noodles that I had left over. I used only one seasoning packet from some chicken flavored Ramen noodles. I also got 'shredder happy' and shredded the carrots along with the cabbage. Very easy to prepare. This is a keeper. Thanks.

Amish Breakfast Casserole

I made this for breakfast when we had some family staying the weekend. Only 3 of us ate everything on our plate. I followed the recipe with the exception of the types of cheese used(I had some cheddar and a mexican blend)and I shredded my own potatoes (placing them between some paper towels to absorb the moisture). This had way too much potato and not enough eggs. It tasted rather bland and I added S&P and garlic powder. I figured I could make it again and 'doctor' it up, but my husband said "Don't you dare!" Sorry, this just wasn't for us.

Basic Corn Muffins

This was an easy recipe. Not my favorite but it was good. Good texture and not too sweet. It made exactly 10 muffins and I baked them for 15 minutes. Thanks for the recipe, I will be using it again.

Fried Cabbage with Bacon, Onion, and Garlic

Sunshine Chicken

We loved this. I had 4 lbs. of chicken thighs, so I upped the other ingredients just a bit. 4 Tbsp. soy, almost 1 c. ketchup and 3/4 c. corn syrup. I used fresh garlic, just a preference. Also, I don't do 'skin', so I removed it. The outside of the chicken created a good crispy texture. Served with the Fried Cabbage with Bacon, Onion and Garlic recipe from MrsMDSmith, and Mac n' Cheese.

The Best Garlic Bread

The absolute best garlic bread I ever had!! I used a loaf of Italian bread. I did add fresh roasted garlic, since I had some already done for my spaghetti sauce. Also about 1 Tbsp. of my Fleishmans Olive oil spread was added in. We ate the whole loaf, one glorious slice at a time!

Mandarin Chicken Skillet

This was good, not great. The sauce didn't have much flavor. I sauteed in olive oil, instead of butter. I used cornstarch instead of flour (as some reviewers suggested). Served it over rice. I will make this again with some additions to make it more flavorful. Thanks for the recipe.

Honey-Garlic Glazed Meatballs

I've never been much for meatballs. THESE CHANGED MY MIND! Excellent flavor. Followed the recipe as written. The flavor of the sauce reminds me of General Tsao's chicken in the Wal-Mart deli that you can buy by the pound. In fact, my husband requests that I make my chicken strips and put the sauce from THIS recipe on them. This will be something I make regularly. I served it over a bed of egg noodles and a side of carrots.

Mom's Best Meatloaf

I baked this the day before we actually ate it. I added some minced garlic and a tsp. of Mrs.Dash 'original blend'. It could have used 'a little something' for more flavor (I would have put in some chopped celery if I'd had it.) Also, maybe next time I'll use 2 eggs, as it didn't hold together well once I reheated it. I will use this recipe again.

Cantaloupe Bread with Praline Glaze

This was an excellent way to use up some of the cantaloupe we have. I didn't do the glaze, as I had no pecans. Subbed half the oil called for with applesauce, per my husbands request. He said a whole cup of oil was more than he'd like to know was in there! If you like spice breads (pumpkin,apple,pear), try this. It came out moist and we liked the flavor alot. Baked in 2 pans--one a 10x6x4. The other a 9x5x3. The smaller of the two took only 45 minutes to bake. The larger took the full hour.

Pasta With Tuna Sauce

I love pairing fish with pasta. This was easy and tasty. A little 'hot' though, so I toned down the heat with a Tbsp. of sugar. Didn't have any capers. I added some oyster sauce. I used chow mien noodles. I'll definitely be making this again.

Brussels Sprouts Stir Fry

These were really good. I wanted to do something with brussel sprouts besides 'heat and eat'. I omitted the red bell pepper (didn't have any). I also added a large clove of chopped garlic. We will be having this again.

Cottage Pudding - Upside Down Cake

I loved it, my husband loved it, and my daughter, too. I used pineapples instead of apples. I added a couple TBsp. of apricot/pineapple preserves too, just because I love the stuff! Out of necessity I subbed half a cup of the AP flour with whole wheat flour. I prefer to eat my cake cold, so I chilled it in the fridge.Baked the full 50 minutes. This is a keeper for sure!

Felix K.'s 'Don't even try to say these aren't the best you've ever eaten, because they are' Chocolate Chip Cookies

With a name like that, I SO wanted these to turn out. I baked 2 test cookies...following the directions exactly. They weren't done in the middle. I reduced the dough ball size to about 1 1/2 Tbsp. Pressed the dough down to about 1/2 an inch and baked at 350 degrees for 15 minutes. Much better that way. My cookies were done all the way through and were thick and chewy. I was 1 cup short of enough brown sugar, so I put 1 Tbsp. molasses in 1 c. white sugar. I may make these again because my husband even gave me a 'thumbs up' on the ones that weren't done in the middle (or maybe he just didn't want to hurt my feelings).Edit time...Now that my cookies have been sitting in their container a couple days...I can't stay out of them! Gonna stick with the 3 stars though, since the recipe(as written) didn't come out 'done' enough.

Easy Batter Fruit Cobbler

As is typical of me, I preferred eating this cold. I used honey because I had no white sugar, just used a little less that 3/4 cup honey. Evaporated milk in place of regular milk. I had fresh strawberries and raspberries, so I added both to this. Topped it off with a combo of brown sugar and cinnamon sprinkled all around. Very tasty...can't wait to have some ice cream with it!!

Applesauce Barbeque Sauce

Okay, so I made this for the first time well over a year ago. I just never thought to rate/review it. I use this sauce on my steaks and pork chops. I really like it alot. It keeps well in the fridge....I think it actually gets better with age (much like myself, Haha).

Southern Style Honey Butter

For me, this didn't have enough honey. I ended up using over half the honey in one of those 'honeybear' bottles. About 7 oz. of honey. I was trying to recreate the honey butter from back in the day (jr. high and high school, they used to have bottles of it at every table for the dinner rolls!). This didn't do it for me. Too much butter-not enough honey.

Cracked Sugar Cookies I

OMG!~These are super delish! Just finished them and I couldn't wait til they cooled off to eat one. Very soft and chewy. I don't use butter much. I used Fleishmans Olive oil spread. I never have a problem baking cookies with it. Edit time...I forgot to add that I didn't have cream of tartar so I used a tsp. of lemon juice...fabulous cookie! 2nd edit...As if this cookie couldn't get any better...I managed to do so. I chopped up a handful of M & M's and put them in half of the dough. OMG!! Fantastic and even more moist than before.
