Creamy Split Pea Soup

Easy, great tasting soup! My daughter exclaimed on her 3rd bite, "You HAVE to make THIS again, Mom!" Followed the recipe except for cutting the salt in half and I didn't feel the need to put it in a blender and puree it. A potato masher worked great! Mashed it up right in the pot. We liked it a bit lumpy. Thanks for this recipe!

Fresh Salsa

Pretty good flavor. Not enough heat to it, very mild compared to other salsas I've had. I put everything in my Magic Bullet and pureed it. Needed more salt, too. I don't usually use a lot but this needed it. Thanks for a quick, easy salsa! Satisfied our late night craving.

Thai Shrimp and Noodles

Usually I make a recipe as close to 'as written' to give a review of the actual recipe. However, so many reviewers suggested not marinating the shrimp in the dressing. So I skipped the dressing part and also doubled the sauce with the exception of the red pepper. Only used 1/2 tsp. because my daughter had to eat it, too. Got lazy and shredded the carrot instead of julienne. Added in some broccoli for color and served over a multigrain thin pasta. Very tasty!! Will be making this again. Thanks for the recipe.

Pinto Bean Cake

Excellent flavor!! You wouldn't know there were beans in this if someone didn't tell you first. I followed the recipe with the exception of raisins. I used prunes that I cut up really small. The flavor is like a spice cake (this actually reminded me of the Romanian Apple Cake from AR) I made my beans from scratch in the crock pot, too. No salt, no nothing, just beans and water. Definite keeper! I'd love to tell people AFTER they ate it that they ate beans!! Thanks for this recipe.

Couscous with Mushrooms and Sun-Dried Tomatoes

Where do I begin? I followed the recipe with the exception of the cilantro (didn't have any) and when it was done I tasted it and wasn't impressed. There was too much tomatoes, the little bit of lemon juice called for made no sauce so it was very dry and it had a real bitter taste. Had to do something to it and quick as the couscous was already done. I added about 1 1/2 cups of chicken broth and 1 cup of apple jelly to the tomatoes and mushrooms. Brought that to a boil and mixed in a little cornstarch and cold water (mixed together) so it would thicken. That saved dinner but I threw out the leftovers.

Cajun Chicken and Sausage Gumbo

Very tasty! I added some carrot and okra in there because I just like it. It was a bit too oily so maybe I'll half the oil and flour in my roux next time. I also used Hillshire Farms Smoked Sausage in place of the andouille sausage. Went easy on the salt but heavy on the cayenne pepper (I had to make my own Creole seasoning). Served it with rice. Taste even better the next day! Thanks for the recipe.

Slow Cooker German-Style Pork Roast with Sauerkraut and Potatoes

I opted to leave the potatoes out and just do mashed taters on the side. I also doubled the amount of meat and sauerkraut. Even though I browned the pork on all sides in a skillet before placing it in the crock pot, it still was really dry. There was plenty of liquid in the pot from the kraut. I also had to chop my whole caraway seeds with a sharp knife (the whole seeds get into my hubby's teeth). It works, but be careful of flying bits of caraway seed! I will make this recipe again because even though my meat came out dry it is worth another shot. Thanks for the recipe.

Aunt Joyce's Chocolate Cake

This is the BEST chocolate cake I've ever made! Very moist. I followed the recipe to the letter with one exception- I had no baking chocolate so I substituted 9 Tbsp. of cocoa mixed with 3 Tbsp. canola oil. I also could not taste the mayonnaise! I'll make this one again and again. Thanks

Peppermint Brittle

Made this around Christmas time and forgot to rate it. I used Almond Bark instead of white chocolate. They came out great! I crushed some candy canes up very fine in my mini blender and poured most of it IN the Almond Bark before pouring it into my pan. This gave it a nice peppermint flavor throughout. Thanks for such a cool recipe!!

Kathy's Delicious Whole Slow Cooker Chicken

I almost didn't want to review this one but I believe that even the bad reviews can benefit someone out there. I followed the recipe except for the garlic. I didn't have any. Something about the flavor just didn't appeal to us. My hubby and I ended up drowning our chicken in some BBQ sauce. Sorry for the 3 stars, Kathy. This just didn't work for us, though my dog loved it--I found an empty plate of chicken I had forgot about out on the counter in the kitchen floor the next morning! I can only hope he survives the chicken bones....

Blueberry Crisp II

Simple and delicious! Of course, I messed it up a bit by not spraying the pan with canola oil cooking spray. I decided to dump it all out so I could spray the pan. When I did that, much of the topping got mixed in and never got crunchy. The parts that were crunchy had great flavor. For those reviewers who had trouble with the topping coming together, I suggest combining the mayo with the sugar and flour using a pastry cutter. Made quick work of it and I had nice crumbles. Will make again, making sure to keep the topping on top next time.

Red River Beef Stroganoff

My husband gave this a "2 thumbs up!" That's saying a lot cuz he doesn't think stroganoff tastes good . I sliced a sirloin steak into thin strips while it was partially frozen. Then marinated the meat in 1 c. brewed cold coffee and 1 c. soy sauce and Tbsp. garlic powder.In preparing the recipe I had to add about 1 c. of water to the beef broth, as it didn't make enough of a gravy for the meat. I also sauteed the mushrooms WITH the onions. Served over egg noodles. I hope I get to make this again. It is awesome!!! Thanks for the recipe.

White Chocolate Chip Oatmeal Cookies

As I was combining all the ingredients and the cookie dough got harder and harder to mix AND began to get crumbly I thought "these aren't gonna be good at all!" I was wrong!! The only thing I did that wasn't in the recipe was that I put only the yolk of the second egg in - not the whole egg. It made the cookies really chewy. I rolled the dough into walnut size balls. Flattened some just a little to see if that worked better than the ones I didn't flatten. They all came out good. This isn't one of those really moist cookies, so get out your glass of milk. Definitely good! Thanks for the recipe!!

Blueberry Snack Bars

Holy Blueberry Hill!! These are awesome! I did have to use some substitutions based on what I had (or didn't have is more like it). No canned blueberry pie filling. I made my own with 1 and a half cups frozen blueberries. Bring half a cup of water, the blueberries and 1/3 cup white sugar to a boil. In small bowl wisk 1/4 cup cornstarch in 1/2 cup cold water. Very gently wisk this mixture into the bluberries. Boil about 5 minutes. Wisking gently and often. Set aside and let cool completely. I also didn't have a boxed cake mix so I used an AR recipe (Cake Mixes from Scratch)for yellow cake. I used the entire (dry ingredients only) cake mix (with complete disregard to the blueberry recipe calling for 18oz. of cake mix.) Turned out great! Made a thick crust that was just right. I baked this in a 9x13in. metal pan at 325 degrees for 55 minutes. Let it cool on the counter then it went in the fridge for a few hours prior to slicing it up into squares. I can't say enough how good this is. Looks kinda fancy, too. Thanks for this recipe!!

French Bread

We really liked this bread. Sliced well. Nice and chewy. Especially good warmed up in the microwave with a little butter spread on it. The only thing I did different was to do it all by hand (no KA mixer) and I omitted the second application of egg wash. I didn't want the outside to be too crunchy. Thanks for recommending this one, Mominator!

Blueberry Cream Muffins

Oh so yummy!! I halved the recipe because I had only 1 c. sour cream. Didn't have enough oil either so I did half oil and half applesauce. Baked 20 minutes. The batter made 12 mini muffins and 6 large ones. Pour water in the muffin tins you don't fill up that way they don't smoke during baking. The mini muffins probably could have come out at 15 minutes. The outsides of them was a bit too done but they taste awesome. These are so great I'd go to the store just for more sour cream and oil to make them again if we hadn't just got 6 inches of snow! Momma's Cornbread Dressing

My first time making cornbread dressing was a big success!! We did a ham for Christmas so I didn't have any turkey broth. I just used more chicken broth. I also don't use the boxed cornbread. I made Great-Grandma Steinbeck's Cornbread (Johnny Cake) from AR. Just one batch of cornbread was plenty. This was so good. I won't be waiting til next Christmas to make it again, that's for sure! Thanks for the recipe.

Sweet Coated Pecans

These should come with a warning....Don't get started eating them. You can't stop!! They are so good! I followed the recipe exactly. I highly recommend these be on your table for Christmas. I made little bags out of cellophane and gave some away as a gift. Thanks for such a great recipe.

Red Enchilada Sauce

This was just the thing I needed for the enchiladas I was making. I followed the recipe except that I replaced one cup water with one cup chicken broth. Definitely gonna use this from now on instead of buying the canned sauce.
