Creamy Dill Dip II

Very nice!! I used a sweet yellow onion because it's what I had on hand. It was quite thick even after adding a couple tablespoons of milk. That fine. I prefer it to be on the thick side. Great for crackers, too. Thanks for this recipe.

Thai Charred Eggplant with Tofu

I had no propane for the grill so I broiled 2 large eggplant for about 20 minutes at 500 degrees. Let cool and peeled it.Diced it into bite size pieces instead of diagonal slices. I followed the recipe with the exception of the chili pepper. All I had was jalapeno. So I used one. Served this over Arborio rice. The recipe as a whole, we didn't care for. Hubby discovered he doesn't like cilantro. We do like the eggplant and the tofu, just not in this. I topped it with crumbled bacon for presentation purposes and served sliced tomato along side.Thanks for the recipe. It just wasn't our thing.

Carrot Burgers

This was just OK. Very dry and didn't hold together well. I think it should have more carrot and less cornflakes. I also shredded the carrots. Can't imagine how hard it would be to make it hold together if they are diced. You might be able to make them more moist by shredding the onion directly into the mixture. That way you get some juice from the onion, too. The family and I agree, that I won't be trying these again anytime soon. It just wasn't for us.

Blender Hollandaise Sauce

Easy sauce to make. It had been a long time since I last had this sauce...don't remember it being as spicy as mine was. It was probably my measuring....I just eyeball things! Excellent served over a bed of steamed asparagus. Thanks for this recipe!!

German Apple Cake I

I love apple cakes! They are a big hit with the whole family. I pretty much followed the recipe. I have started using cake flour for my cakes, to see if I like it better. I do! My only mistake with this recipe was deciding to bake it in a bundt pan that I coated in oil and sprinkled with sugar rather than flour......Nice idea in theory. It stuck so bad to the pan that I had to spoon it out. On the upside, the crystallized sugar made a delicious, sticky crustiness on the outside of the cake.

Poor Man's Hamburger Steaks

I didn't bake this, I made it in my electric skillet. Used Ritz Crackers because that's what I had on hand. No canned soup aloud in my house so I used an AR recipe for Home made Cream style Soup Mix. You should check it out!! My husband said tonight's dinner was restaurant quality.

Artichoke Stuffed Mushrooms

10 stars!!!! Restaurant quality and my husband said tonight's whole dinner was restaurant quality. Thanks, Anita!! I had to sub Cotija, Mozzarella and a bit of cheddar for the Italian blend. Worked great! I had never had an artichoke before.....I have been missing out!!

Honey Mustard Chicken with Pretzel Crust

This was excellent chicken, Kathleen!! The only thing I left out was the grainy mustard, didn't have that. Baked 25 minutes and it was just right. The hubby requests that I deep fry it next time, lol (if it ain't broke, don't fix it, I say)....he decided he likes pretzels and just didn't know it!

Dill Pickle Meatloaf

PICKLES!! I would have never thought to use pickles and pickle juice in a meatloaf. This made the house smell like a McDonald's hamburger as it was baking!!LOL I don't know if it is the ratio of fat to meat in our beef, or what, but I always have to use 2 eggs in my meatloaf. So, I did in this recipe, too. Also used 2 slices of bread. I kept everything else the same and it held together very well. I bake meatloaf on a wire rack wrapped in tin foil (poked full of holes with a toothpick for easy drainage of any grease) instead of a baking dish. I free formed the loaf. Baked for 1 hr and 10 minutes. The whole family loved this and said they'd definitely eat it again. Thanks for a great meatloaf!!

Spruced Up Mashed Potatoes

I scaled this down for 4 servings. I didn't have enough potatoes for dinner so I went looking for a way to make them stretch. This recipe did the trick, as I had plenty of cauliflower! I left out the carrots and added about 3 Tbsp. sour cream per some reviewers suggestion. My husband couldn't tell there was cauliflower in it! I used a hand held potato masher. Over mixing your mashed taters makes them yucky. This is a keeper!!

Pumpkin Roll I

This could not be easier to make. My 9 yr. old helped with everything! I didn't find out til it was too late that I was out of all purpose flour, so I used bread flour and it worked great. Also out of vanilla extract but with only 1/4 tsp. called for, I don't think anyone will miss it. I used real butter to grease the jelly roll pan. It baked in 15 minutes, not a minute longer. The filling was pretty sweet and the pumpkin flavor was mild. Nice presentation when you slice it up!! Thanks for this recipe. It will get a workout next Christmas, that is for sure.

Irresistible Double Chocolate Muffins

Fantastic! Healthy! I didn't have any chocolate chips so I used some caramel bits I had. Great idea! This batter made about 12 large muffins and 12 mini muffins with a bit left over that I haven't made yet. Mini muffins took 15 minutes to bake. The large ones took 20 minutes. Thanks for this recipe, it's a keeper!!

Baked Meaty Beans

If my husband hadn't liked these beans SO much I would not be leaving a review because I left so many things out....no onion, used onion powder, no real maple syrup, no chipotle sauce used hot sauce, no cannellini OR great Northern beans. I also make my own brown sugar using white sugar and molasses (so easy and cheaper than buying brown sugar!) I added about 2 Tbsp. of chili powder and a Tbsp. of Cumin. I cut the recipe in half also since I'm not feeding an army. Cooked this in my electric skillet instead of baking it. I also had to add about a cup and a half of water as it was cooking because it was very thick and we like our beans a little looser. Great recipe! Sorry I didn't follow it exactly but it still came out yummy.

Chocolate Peanut Butter Marble Cake

Never had a peanut butter flavored cake before. This is excellent!! I used creamy peanut butter in place of peanut butter chips. It seemed to me that a cup and a half was too much batter to be adding in to the cocoa mixture because when I went to drop it over top by the spoonfuls it almost completely covered it. I thought there was no way to swirl it in without totally mixing the two batters and coming out with a light brown cake BUT it worked. The chocolate swirl looks AWESOME! I topped it with a simple icing of milk and confectioner's sugar. It took 40 minutes to bake. Definite Keeper!!!

Apricot Glazed Carrots

I used crinkle cut carrots to cut out some of the work. These were quite sweet but tasty. I didn't put near the amount of nutmeg called for because my hubby doesn't like nutmeg (I love it, though). Also used dried parsley in place of fresh. The carrots were a good addition to the sage chops and gravy with bacon flavored rice we had for dinner. Thanks for the recipe!

Shrimp Scampi Bake

I'd give it 5 stars for easy preparation. Not enough of a sauce when I served it over my whole wheat pasta. It absorbed most of it. Great flavor though. I added some broccoli florets in for a veggie to go with it. The shrimp only took about 10 minutes to cook also. Thanks for the recipe.

J.P.'s Big Daddy Biscuits

Great biscuit and so easy! I soured my milk before using it (1 Tbsp. vinegar added to 1 c. milk, let sit for 5 minutes before using). This made 9 biscuits for me. My hubby said they needed more salt. I try and not use it where I can get away with it because it's not good for you. I would recommend NOT kneading the dough hardly at all. That way they're nice and light textured. Keeping this recipe!! Thanks Mr. Pickett!
