Seafood Piccata

Outstanding! I used Trader Joe's Lemon Pepper Papparadelle pasta instead of seashells and that added just the right compliment. I agree about waiting to put seafood in until the absolute last minute for tender perfection. I halved the recipe for 3 of us & had PLENTY leftover. I would also recommend doubling the amount of mushrooms (if you love them like my family does).

Faux Jerk Chicken

Wonderful, juicy, delicious, fabulous, sweet/spicy perfection! Now that I'm out of adjectives LOL..... I use jalapenos instead of scotch bonnet/habanero. I dice one, then remove seeds from a 2nd & put it in the marinade whole. Freezes well, I make up a big batch of marinade & divide breasts in Ziploc freezer bags to marinate in the freezer for easy weeknight meals. Just thaw in a sink of cold water when you get home from work (usually thaws in about an hour – just enough time to get the charcoal going & have an adult beverage) Fabulous on pork tenderloin as well…we serve w/saffron rice & black beans. Italian Sausage Soup

Our favorite sausage soup! I used hot italian for my sausage. To reduce sodium, I used store brand broth (surprisingly much lower sodium than Swanson's low-sodium)& eliminated the 1/2 teaspoon called for. Thanks for a great winter warmer!

Taco Seasoning I

This recipe does not need another 5 star review, but I can't resist. I, as well as others will NEVER buy taco seasoning again. I even made a huge batch, printed copies of the recipe & gave as a little Christmas bonus gift. As soon as my sister-in-law received hers, she did the same LOL! Bill...I bow to you sir!

Boilermaker Tailgate Chili

Lots of ingredients, but WORTH EVERY DIME! I even added a few more LOL. I used hot italian for my sausage, 4 serranos instead of green chilies, added 1/2 cup strong brewed coffee & 1 teaspoon cocoa (hubby is from Ohio...had to throw in a little Cincinnati for him). **********10 stars for this one Mighty Purdue!

Double Layer Pumpkin Cheesecake

Fabulous! This has replaced our traditional Thanksgiving Pumpkin Pie. My only suggestion is don't use whipped cream cheese. No fault of the recipe submitter, I flubbed that one. So block cream cheese it is from now on. Great recipe Stephanie!

Cha Cha's White Chicken Chili

The best white chili recipe on this site! I eliminated the oil & just used the juice from the can of chilies for moisture to sweat the onions. I agree with other users about the heat, it's a bit much (and we love hot!). So, I used 4oz. of diced jalapenos to 12oz. of green chiles, subbed 2t. chili powder for the cayenne. I used 6 grilled chicken breast for the 6 cups (grilling added a nice flavor). The beans I used were Mixed Beans (northern & pinto) & Canellini (white kidneys). I also held the cheese out to use for garnish & a dollop of sour cream on top is always great! My health nut daughter said "Wow, you could sell this stuff!" Thanks so much for the post Cathy!!

Marinated Turkey Tenderloins

Outstanding! I purchased "Turkey Mignon" & was looking for a way to marinade...boy did I find it. We marinated overnight & grilled to perfection. I haven't had a piece of meat that moist, tender & delicious in a very long time. You got rave reviews from my husband & daughter as well. Thank you so much for the post.
