Seafood Piccata
Outstanding! I used Trader Joe's Lemon Pepper Papparadelle pasta instead of seashells and that added just the right compliment. I agree about waiting to put seafood in until the absolute last minute for tender perfection. I halved the recipe for 3 of us & had PLENTY leftover. I would also recommend doubling the amount of mushrooms (if you love them like my family does).

Faux Jerk Chicken
Wonderful, juicy, delicious, fabulous, sweet/spicy perfection! Now that I'm out of adjectives LOL..... I use jalapenos instead of scotch bonnet/habanero. I dice one, then remove seeds from a 2nd & put it in the marinade whole. Freezes well, I make up a big batch of marinade & divide breasts in Ziploc freezer bags to marinate in the freezer for easy weeknight meals. Just thaw in a sink of cold water when you get home from work (usually thaws in about an hour – just enough time to get the charcoal going & have an adult beverage) Fabulous on pork tenderloin as well…we serve w/saffron rice & black beans. Thank you

Italian Sausage Soup
Our favorite sausage soup! I used hot italian for my sausage. To reduce sodium, I used store brand broth (surprisingly much lower sodium than Swanson's low-sodium)& eliminated the 1/2 teaspoon called for. Thanks for a great winter warmer!
