Asian Broccoli Patties

Reviewed: Sep. 23, 2004
These weren't very good. Way too eggy; the last ones got worse. No one would eat them. I ate 1.

Dirty Rice

Reviewed: Jun. 17, 2003
This recipe is fantastic. I've made it with long cooking brown rice and if you add chicken breasts or pork on top of the rice for the last 20 minutes or so, you have a complete meal-in-a-pot.

Sam's Famous Carrot Cake

Reviewed: Sep. 18, 2002
I chose this recipe because the fat content was lower than some of the other carrot cake recipes. I reduced the oil to 1/4 C., split the flour to 1 cup white, 1 cup whole wheat, used 3 cups carrots, 3/4 cup coconut, 3/4 cup half walnuts, half pecans and left out the raisins(don't like them). This reduced the fat even more, and it was an incredible cake! Thanks for this recipe.

Baked Seafood Au Gratin

Reviewed: Jul. 10, 2002
This was extremely delicious! My husband and I really loved it. It was a lot of work, but turned out great! I'd serve it over rice or pasta next time.

Strawberry Pie II

Reviewed: Jul. 3, 2002
This was the most incredible tasting pie! I made the Big Guy Strawberry Pie crust (which is an easy shortbread crust) to go with it and it was a fantastic combination. I'm making it again for July 4th! Yummy!

Excellent bean salad! I used less dressing as other reviewers suggested and it turned out great! Everyone at my barbecue loved it.

Caribbean Sweet Potato Salad

Reviewed: Jun. 24, 2002
A delicious potato salad; much better than mayo-based salads. I would suggest using a Yukon Gold potato instead of the russet; better texture and flavor. I will make this again and my guests loved it too.

Roasted Red Pepper Lasagna

Reviewed: Jun. 12, 2002
This is a delicious lasagne, even my kids ate it (1 being an extremely picky 13 year old). They picked out the peppers. My husband and I loved it. Perhaps the previous reviewer forgot to add the tomatoes, (they are considered a vegetable even though technically, they're a fruit). I bought red peppers for 50 cents each and the white sauce turned out PERFECT the way the recipe was written. If you cook it long enough, it doesn't taste floury. I did add some mozzarella cheese and it was very delicious! I will definately make it again. By the way, what other vegetables does traditional lasagna have besides tomatoes? (See previous review)

Unbelievable Chicken

Reviewed: May 29, 2002
This truly was delicious! I have a baster with an injection attachment, so I injected the chicken breasts with the marinade and they were very very good. My guests loved it.

Excellent! I loved them and so did my husband. I'll bet shrimp would be good in these too.

Famous Japanese Restaurant-Style Salad Dressing

Reviewed: Apr. 15, 2002
This salad dressing is THE BOMB! We love it and my guests love it too! I have to give out the recipe. I substitute 1/4 C. of chicken broth for half the oil and replace half of the oil with sesame oil. It's awesome!

Macadamia-Crusted Sea Bass with Mango Cream Sauce

Reviewed: Apr. 12, 2002
The crust on the fish was delicious; I used orange roughy and dipped the seared, but uncooked fish in the crust before baking and it turned out great. However, I tried twice to make the cream sauce and the cream curdled. I did use half milk, half cream, so maybe that was the problem.

Orange Mango Chicken

Reviewed: Apr. 12, 2002
the orange juice overwhelmed the flavor of the mangoes and made them taste like peaches, but it was good.

Cooking Light magazine's Cherry Cheesecake

Reviewed: Mar. 25, 2002
This was so incredible, I can't believe it's light! You MUST make it 1 day ahead; the texture is so much better. I topped it with strawberries and MMMMM! I'm going to make it for Easter.

Chicken Pesto a la Lisa

Reviewed: Mar. 8, 2002
This was excellent. I am eating the leftovers for lunch right now. I think next time I will cut the chicken into bite-size pieces and after browning, cook them in the sauce to keep it moist and flavorful.

Black Bean Casserole

My husband and I really liked this casserole. My 3 year old ate it too. I used canned black beans and skipped all the long soaking and cooking times. It worked well.

Banana Sour Cream Bread

Reviewed: Jan. 18, 2002
This is easy and oh, so delicious! I replaced some of the butter with 1 extra banana and used light sour cream. Because I was baking it in the evening, when it was almost finished baking, I turned off the oven and let it stay in there overnight. In the morning, it was perfect and delicious!
