After reading all of the reviews, I expected to be disappointed with this bread, but I was not at all. It was moist and dense and held its shape well. I did make a few minor changes, but none that would cause major changes in the bread's consistency. Instead of the herbs listed, I used what I had in my garden; thyme, sage, oregano, and basil, plus some dry rosemary. I did add a pinch more of salt after tasting the dough. I also substituted one cup of the flour for whole wheat flour and grated parmesan cheese on the top. I used the bread as a substitute for corn bread or rice with my chili. Everyone enjoyed it, and I will probably make it again.
