Red Raspberry Vinaigrette

Reviewed: Jun. 25, 2011
Yum!!! I just made this. I used seedless raspberry jam which made the blender not necessary. I just mixed by hand then put it in a container and shook it. It all blended together quickly and easily. I did use the raspberry vinegar which I think added to the raspberry flavor. I can't wait to put it on my spinach salad tonight. Thanks for the easy delicious recipe!

Chicken Pot Pie IX

Reviewed: Apr. 5, 2011
I wish I could give this more stars because it is so good. I love the fact that you make your own gravy and do not use soup. I did add potatoes, but other than that used ingredients exactly as written. I did use a 10" pie plate with the 9" pie crust and did not have to cut any excess away. Next time I might up the gravy. Not because it was dry. It was very moist. I just prefer more gravy. The leftovers were just as good as well. I will definitely make this again. YUM!!!

Mama's Asian Chicken and Rice

Reviewed: Feb. 28, 2011
This is an excellent recipe. I did double the sauce just because we love sauce. I would have used the chinese 5 spice, but could not find it. I used cayenne pepper in place of it. I served it over brown rice and it was a hit. I will definitely make this again. I may add some veggies next time, but this is excellent as is!

Chipotle Crusted Pork Tenderloin

Reviewed: Feb. 21, 2011
Yum! Yum! Yum! This was wonderful. I did use the full amount of chipotle chile powder and was glad I did. We love spicy. The pork was tender and the leftovers are just as good. If you love spice do not shy away from using all of the chile powder! I am not a pork fan, but this rub turned me around.

Jimmy Dean Sausage Cheese Balls

Reviewed: Dec. 5, 2010
Yum! Yum! Yum! I used zesty sausage and got rave reviews. In one batch I did add the onion and celery and one I did not. It was definitely better with the onion and celery. I baked them the night before and just warmed them in the morning. Delicious!!! This is a keeper and will be on the menu for Christmas morning! Thanks for sharing!!! Here is a tip to avoid a mess. I baked them on my broiler pan that I lined with foil. The grease drips through thus avoiding a messy cookie sheet. Also, let them cool a bit before removing from the pan. Enjoy!

Supreme Scalloped Potatoes

Reviewed: Aug. 28, 2010
Yum Yum Yum!!! These were delicious. I also used the cheddar soup because we love cheese. I sliced the potatoes thin and just par-boiled them. I layered the soup/cheese/mixture with the potatoes and baked for about 40 minutes. They were perfect. I was thinking about adding some bacon next time for a small change. Excellent recipe! Will definitely make again!

Chicken Fajita Melts

There is a recipe here for taco seasoning that is wonderful. Taco Seasoning I from Bill Echols. It is so much better than store bought and very quick and easy to make. I make up a huge batch and keep it on hand for recipes that call for taco seasoning. Also, you can regulate what goes in and adjust to your taste. Enjoy!!!

Spicy Smoky Macaroni and Cheese with Turkey Bacon

Reviewed: Jan. 17, 2010
Yum!!! I was a little hesitant especially with the turkey bacon, but it was wonderful. It also re-heats beautifully. I might try a different type of pasta next time. The shells stuck together and I had to pull them apart, which was a pain, but that didn't take away from the recipe. I also might add a touch more cayenne pepper just because I love spicy. Yum Yum Yum

Spicy BBQ Chicken

Reviewed: Jul. 19, 2009
This sauce was excellent. The only drawback was that it didn't make enough sauce for ribs. When I saw that it only called for 3/4 cup of ketchup I decided to double the recipe. It still was not enough for the ribs. I will definitely make this again, but will probably triple the recipe. YUM! YUM! YUM!

Corned Beef and Cabbage I

Reviewed: Mar. 12, 2009
This has been my standard recipe for years. I have found one thing that takes it to the top. After the corned beef is done cooking I remove it from the pot or crock pot and top it with a glaze of mustard and brown sugar. You can mix it to your liking. I make a lot and let it drip down all the sides. I then put it in the oven until it is heated through and the brown sugar is dissolved. Then slice and enjoy.

Easy Swedish Pancakes

Reviewed: Mar. 8, 2009
I decided to try these to have a change from regular pancakes. After reading the reviews I added 1 cup of flour, added vanilla and did not put in the butter. I would have been way too "eggy" had I not added the extra flour. I used an 8 inch omelet pan which took a little time, but they turned out great. I will make these again.

Dark Chocolate Bacon Cupcakes

Reviewed: Mar. 5, 2009
I made these out of curiosity. I served them to friends and did not tell them what was in them. I had odd reactions. It was mainly the texture that they did not like. I thought the cupcake itself was wonderful, but they did not need the bacon. I feel that the bacon really didn't add anything to the flavor. I agree with other reviews that the cupcakes are better the second day. The first day there was a strong coffee flavor, but on day two they were wonderful. I will definitely make these again minus the bacon. It did make for interesting conversations though.

Baked Ziti I

Reviewed: Nov. 9, 2008
Yum, yum, yum. This was a hit with everyone including the kids. I was a little concerned about the onions, but since they are cooked along with the meat they blend right in. A little tip that made spreading the sour cream easier. I put a few spoonfuls of the hot pasta sauce in and mixed it together. I was then able to pour and spread the sour cream quite easily. I only had mozz. cheese on hand so that was all I used. This did make a ton and did not fit in my 9x13 pan. I will definitely make this again!!!

Chicken Lo Mein

Reviewed: Oct. 12, 2008
This was delicious. I used 2 cups of chicken broth and 1/4 cup water, but next time I will reduce the liquids as I had to add more corn starch to get it to thicken. I also added sugar snap pea pods and left out the mushrooms only because I do not like them. It was a hit with the family and I will definitely make it again!!!

Zesty Red Potatoes

Reviewed: Jul. 15, 2008
This was EXCELLENT!!! I only had red onions so had to use those. I layered the sliced potatoes and onions. I used half the butter as suggested by others. During the last 10 minutes I topped with cheddar cheese as others suggested. I forgot to add the garlic salt, but since the red onions are strong I didn't miss it. Yum, yum, and yum. You can imagine my disappointment when I dropped the leftovers on the kitchen floor. I will be making these again very soon!!!

Awesome Slow Cooker Pot Roast

Reviewed: Jun. 29, 2008
This was outstanding! I will never cook pot roast another way. Even the picky picky kids who turned their noses up at first LOVED it! I am NOT a fan of mushrooms, so I put the soup through a strainer to take out the mushroom pieces. Worked perfectally. Still had the flavor, but no mushrooms. Not only is this a keeper, but a recipe I will pass on to family and friends!

Jay's Signature Pizza Crust

Reviewed: May 25, 2008
This was the best pizza crust I have ever made. It does make a huge crust, so I made it fun for all and let each family member create their own personal pizza. As other reviews suggested I too baked it for about 10 minutes before adding the toppings. Be creative with your toppings. Enjoy!!!

Fiery Pork Skewers

Reviewed: May 25, 2008
Yum! Yum! Yum! What more can I say? I am not a fan of pork but decided to give this a try. I doubled the sauce and because we like spicy, added more red pepper flakes. I let it marinade overnight. When I put the pork on the skewers I also added red onion and red and green pepper. The sauce was so good that I am going to try it on chicken and steak. Fire up the grill and enjoy!!! Great recipe!

Baked Teriyaki Chicken

Reviewed: Feb. 27, 2008
Oh My!!!! I am reviewing this before I have even cooked the chicken. This is the best teriyaki sauce I have ever tasted. Use it for any recipe that calls for it. I did omit the pepper just because I am not a pepper fan. Of course I added 1 extra clove of garlic because I love garlic. I can't wait to put this on steak and veggies. I did line my pan with foil and am pretty sure I will be glad I did. This is a definite keeper!!!
