Garlic Mashed Red Potatoes

These mashed potatoes are not only easy to make, they are just delicious! I was wary of using whole garlic cloves in the boiling process versus roasted them in the oven until they are soft. However, as I mashed the potatoes, the garlic was soft and incorporated into the potatoes quite well giving the final product a subtle garlic flavor. I highly recommend this recipe!

Chantal's New York Cheesecake

This is a delicious cheesecake! It's very creamy without being dense or overly sweet. I was skeptical about leaving the cheesecake in the oven after 60 minutes for 6+ plus hours, but sure enough, when I removed the cheesecake, it had the smoothest top without a single crack! I made a fruit topping using a cup of red currant jelly that I heated up in a saucepan. I added a pint each of raspberries, strawberries, and blueberries and stirred to cover the fruit. I spread the topping over the cheesecake after refrigerating for 1 hour. Delicious!

Broccoli Quiche with Mashed Potato Crust

I had leftover mashed potatoes from Thanksgiving that I used to make this recipe. After pre-baking the potatoes for 30 minutes, they were slightly browned. However, after adding the filling ingredients, and baking for 45 minutes, the bottom was not crispy. It did not affect the taste whatsoever, as the recipe is still delicious. The crust more blended with the filling rather than being a separate entity, like a typical pie crust. It's a great way to use leftover mashed potatoes and is very flavorful!

Meatball Sandwich

I loved this recipe! The meatball recipe is just perfect. Like most reviewers, I adjusted the quantities of the seasonings: adding 3 teaspoons Italian seasoning, 3 tablespoons of grated Parmesan cheese, 2 tablespoons minced onion, and pinch of salt and black pepper. For the last step, I put the meatballs on one side of the french bread and topped it with fresh mozzarella cheese. I put it in the broiler for approximately 5 minutes when the cheese started to bubble. It was delicious!

My Chili

I love this chili recipe! It's easy in its preparation and ingredients, and totally full of flavor! I added more chili powder and salt and pepper to taste. I also followed other reviewers and out of the 4 cans of stewed tomatoes, I substituted 1 with diced tomatoes and chili peppers. I prefer my chili with more beans, so I added a second can of kidney beans. Five minutes before serving, I added 2 chopped green bell peppers for some crunch. I top my chili with shredded cheddar cheese and a dollop of sour cream. Everyone loved this recipe - as adhered to the original, but even more when doctored up a bit :)

Fresh Apple Cake II

After reviewing the alterations of this recipe, I changed the following: 1/3 cup oil, 1/4 cup applesauce, 1 cup white sugar, 3/4 cup brown sugar. I thought the sweetness was perfect for my taste. The cake was definitely moist, and light even. It's delicious right out of the oven, but sets up when cooled. Will definitely make again!

Black Bottom Cupcakes I

I carefully followed the other reviews regarding extra vanilla extract, room temperature ingredients, and properly mixing the filling. I add a little extra chocolate chips in mine as I preferred the taste and texture more. These cupcakes aren't the most elegant looking, but they are incredibly delicious. After being refrigerated overnight, they taste even better!!

Carrot Cake III

I followed the alterations that "gneebeanie" included in the review, and the results were amazing! I substituted walnuts for the pecans (for the cake part) and used only 1/2 cup which I ground up in a cuisinart. Also, I only used 3 cups confectioner's sugar, and the frosting was still sweet! I think the final product tastes best after being refrigerated overnight. The frosting hardened a bit and the flavors were completely unified. Will definitely make again!!!
