Vegan Pancakes

This were really nice. I stuck to the original recipe and only changed it to gluten-free. That was probably the reason why my pancakes came out extra fluffy but fell apart. Besides using a mix of corn starch and rice flour, I should have probably also added guar gum and an egg substitute. Either way, the flavor was good, and I'll definitely make these again.

Sweet Restaurant Slaw

I made this with mayonnaise, celery seeds, and apple cider vinegar, and it came out great. Initially, I wanted to reduce the amount of sugar, since there were several comments that suggested doing so. However, I ended up using almost the full amount anyway. Great dressing! Even my husband, who is not a fan of "chewy" salads liked this.

Baked Tortilla Chips

Very nice recipe! I don't have a mister, so I just sprayed the tortillas with baking spray. Some of the chips were a tiny bit chewy, but most of them came out just perfect, nice and crunchy. Thanks so much for hsaring!

Flourless Peanut Butter Cookies

This is my favorite peanut butter cookie recipe! I love it how quick and easy these are. I wasn't sure whether they were really going to turn into cookies, since the recipe doesn't use any flour, but they turned out so good! The best thing is that they are gluten free, so I could just make them as is without using gluten free flour. However, I did make some changes according to the recommendations. I used 1 teasp. vanilla extract and as much light brown sugar (about 1/4 cup) as I had left to add up to a total of 1 cup with the the white sugar. I also didn't have any eggs, so I used a flaxseed egg substitute, as listed on many vegan websites (1 Tbsp. ground flaxseed + 3 Tbsp. water). The texture was still perfect.

Garbanzo Bean Chocolate Cake (Gluten Free!)

This is my absolute favorite chocolate cake! It's very moist and flavorful and so fast to prepare. Although I was a bit concerned about it, one doesn't taste the garbanzo beans at all. I will definitely make this again, most likely to give a great example for the fact that gluten free baked goods don't have to taste weird or bland.
