Christmas Breakfast Sausage Casserole

Mini Eggplant Pizzettes

How awesome! My hubby and I were at that point (11 days into Phase 1) where we were getting tired of salads. This was the perfect change!! The only thing I did differently was jazzed up the sauce with garlic, italian seasoning and red pepper and also sprinkled some reduced-fat parm. cheese over the top. My hubby doesn't even like eggplant (or at least, I haven't been able to cook it right to where he enjoys it...) and he really loved this one! Thanks!~

Italian-Style Spaghetti Squash

This was great! I did all the little extras that was suggested by other posts (turkey italian sausage (I used one link of the hot and one link of the sweet)....garlic and mushrooms! A total hit for both my hubby and me! Thanks!

Italian Sausage Soup with Tortellini

Totally awesome soup! My step-son made it (he's 14) and it turned out wonderfully. There was quite a bit of prep but it was well worth it. Adding garlic bread to this was a nice touch as we all dipped our bread into the very tasty broth. YUMMY!!~

A great and very popular tropical drink. Traditionally, you add creme de banana to it but the banana rum would be a cheaper alternative (2 bottles vs. 3). That's the joy of tropical drinks...you can modify them to your own personal liking! And everyone likes an escape to the islands from time to time...even if it IS mentally with an umbrella drink in hand!~

Awesome! I used hot italian sausage and it give it quite a bit of fire. I was anticipating a LOT of leftovers but there was just enough for two small helpings the next day. ...sigh... Very good. Even the kids got seconds.

Granny's Swiss Steak

What an awesome recipe! I sort of cheated a bit though. I put the green peppers, onions, mushrooms, celery, tomatoe juice, ketchup, dry onion soup mix all in a blender and made a puree out of it. (If the kids would have seen all of those veggies, they would have instantly hated it!) The kids loved it. I even made sure that they really liked it before I told them what was in it. My 7 year old got THIRDS!! And that's very odd for him!! Thank you so much!!~

Cold Macaroni and Tuna Salad

Great recipe. Very similar to what I was used to as a child. I too used the sea shell macaroni as well as Miracle Whip. I also add some celery salt, as I can not STAND the crunchy texture of celery in a dish. (Love it by itself though!)To me, this dish is best when it's been in the fridge for a couple of hours and is nice and cold. You may have to add a little more miracle whip, as it tends to get soaked up by the macaroni. This is a good thing though...flavors infused. BTW...it's not supposed to be the life-of-the-party, folks...only a side dish. It's ok if it's 'simple'...it's supposed to be! :o)
