Almond Sauce Chicken Breasts
Truly delicious, my husband loved it! I did not have almond paste on hand so instead I used almond butter which gave the sauce a heavier, creamier consistency. Next time, if I opt to use the almond butter I will use half and half instead of the heavy cream to make a lighter sauce. I did not find the preparation of the recipe at all difficult and contrary to comments from a couple of other reviewers, I had no problems with the almond crumbs adhering to the chicken nor did I experience any burning or charring of the almonds. I will certainly prepare this recipe again!

Lemon Garlic Tilapia
This was a delicious, quick, and easy to prepare recipe for tilapia. The filets I purchased were fresh and quite thicker and larger than usual so I did bake them for the amount of time specified in the recipe and they turned out great. I did use fresh parsley rather than dried. I served the fish with oven roasted sliced potatoes and sauteed spinach. My husband is not crazy about baked fish but he truly loved this dish. This recipe is a keeper.

Mexican Shepherd's Pie
Very yummy! I took this dish to a potluck party and it was a hit...the recipe was very much requested. I used extra lean ground beef and added kidney beans, corn, mild green chilies, and salsa. I used a Mexican blend of cheese instead of the Cheddar and layered over the meat then topped it with the corn and the corn bread mixture. In addition to the black olives I added light sour cream, cilantro, green onions, and chopped fresh tomatoes to top it. Left out the cheese.
