Too Much Chocolate Cake

Reviewed: Jun. 4, 2009
I took this to work for a friends birthday and everyone loved it! I decorated the top of the cake with coconut rum balls and drizzled melted chocolate. Overall it ended up looking like an expensive store-bought cake, not something that I had whipped up the night before!

Best Bread Machine Bread

Reviewed: Jun. 4, 2009
Despite some really interesting suggestions from other reviewers, I followed this recipe to the letter and it turned out fantastic! So light, fluffy and easy to make. My only complaint would be that the intoxicating smell of the bread woke me up at 5:00am. Something tells me that I may need to reset my timer!

Blueberry Muffins II

Reviewed: Apr. 21, 2008
Good recipe. Like other reviewers I also substituted the butter for 3/4 cup of applesauce. In addition I used 1 teaspoon of vanilla and 1 teaspoon of cinnamon. I didn't sprinkle any extra sugar on top. Will most likely make again.

To Die For Blueberry Muffins

Reviewed: Mar. 30, 2008
I found these to be way too sweet for my taste. Next time I will cut back on the amount of sugar/topping, as suggest by other reviewers. Even my partner (who has an extremely sweet tooth) could only make it through 3/4 of a muffin. Disappointing...

Cheesy Vegetable Lasagna

Reviewed: Mar. 30, 2008
Extremely enjoyable Vegetable Lasagna. Like other reviewers, I used a little bit of butter in my white sauce. I also added extra Parmesan and a little bit of Mozzarella. In terms of the vegetable sauce, I added some fresh spinach, parsley, tinned tomatoes, small red chili, dried sage and a leek. Overall result was good - extremely filling. My partner couldn't believe that there was no meat in it! Great way to use up whatever veggies you have in your fridge. Chopping all those veggies was a little time consuming, so I probably wouldn't recommend this for an easy mid-week dinner. Great Sunday night recipe though - and the best thing is that I can use the leftovers for lunch during the week.

Light Oat Bread

Reviewed: Oct. 28, 2007
Fantastic recipe - bread was very light and tasty. I used the wholewheat setting on my bread machine and the crust was amazing - it had just the right amount of crunch. Unfortunately the top of the loaf did 'explode' out of my bread machine during the last 20 minutes of cooking. Next time I may need to reduce the amount of yeast. Will definately be making this receipe again!

Honey Of An Oatmeal Bread

Reviewed: Oct. 27, 2007
Not quite sure what to say about this recipe. My partner absolutely loved it and said that it was possibly "the best bread that he had ever tasted". Personally I found it too dense and a little bit too sweet for my taste. Will more than likely try this recipe again, although next time I will only use half the honey.

Apple Strudel Muffins

Reviewed: Oct. 21, 2007
Like most people I added 1/2 cup of applesauce, as well as a pinch of nutmeg and cinnamon to the dry ingredients. With these added extras, I would definitely give these muffins 5 stars. Very soft and moist - and the topping is spectacular. Will definitely be making these again.

Chocolate Chip Bran Muffins

Reviewed: Oct. 13, 2007
What can I say...these were fantastic! I followed the recipe exactly as outlined (although I didn't have any buttermilk, so I had to make my own with a little bit of milk and lemon juice). I thought that the bran flakes gave the muffins a really interesting texture. I roughly crushed mine with a rolling pin, so they maintained a detectable 'crunch'. Next time I might give them a quick whiz in the food processor. Overall I ended up with 20 jumbo muffins - very filling, with just the right enough of sweetness. Just be sure to grease your muffin pan thoroughly - a couple of my muffins seemed to stick to the sides. I will definitely be making these again.
