Stuffed Peppers My Way

LOVE, LOVE, LOVE! We will definitely make these again and will enjoy trying variations. I definitely preferred this version of roasting the peppers rather than my other recipe of parboiling them. I added chorizo for some meat, and will likely add spinach next time.

Blooming Onion

Basic Cheese Polenta

Wow! This was so easy, and delicious! I might actually reduce the parmesan cheese to 1/2c or 3/4c next time. We enjoy polenta, and I never realized how easy it was to make. Thanks.

Rhubarb Crisp

This recipe was great! Contrary to the few reviews below which didn't like it, I think if you put in the 1 teaspoon of the salt and baking soda there won't be a problem... It turned out quite nice on the first time. We put in 4 cups of rhubarb (as ours has done plants amazingly well this year) and then bumped everything up a little. I would probably up the amount of oats as one other person suggested to make it a little thicker. This was a great recipe that I will definitely make again.

Pumpkin Rolls I

Pumpkin Soup the Easy Way

Completely awesome! I used a block of cream cheese instead of the cream (that's what I had in the house at the time), which worked ok, but I'm making it again tomorrow with cream and am looking forward to it. This is a hit!

Pumpkin Casserole

This is TERRIFIC. I made it several times over the Thanksgiving/Christmas holidays, and each time at least one person asked for the recipe. Delicious. I have experimented with adding less sugar (or substituting Splenda) and used regular flour with a bit of baking powder instead of self-rising flour. Every time it's been terrific!

Quick Pumpkin Pudding

This was pretty good. Very easy to throw together. You can easily substitute skim milk for the evaporated milk. I used nutmeg instead of cinnamon (our cinnamon was temporarily missing!).

Blueberry Pumpkin Muffins

WOW! Yummy. I followed directions to the letter and got a delicious, moist result. I double the recipe and ended up with 12 muffins and 1 loaf of bread (which I just baked longer until the center was set). Will definitely make again, this is a keeper!

Chunky Peach Spread

Yum!! We used this recipe for canning, and it worked great... very quick and easy. We added a little more sugar to the second batch, but the overall recipe is terrific!
