Potato Pancakes I

My daughter has been asking for potato pancakes for a while now, so we have tried a few different recipes. She liked this one by far the best. She doesn't like onions, so I did leave out the "real" onion and used a dried minced onion for flavor. I had a little trouble with them falling apart when I flipped them, but since I'm a novice potato pancake maker maybe it was my technique.

Slow Cooker Chili II

This was very good. I tripled the recipe (except the meat - only doubled) based on the large cans of tomato puree I bought and made it with ground turkey. Very filling, meaty and tasty. My son and husband aren't fond of beans and this had a lot of them. Son ate them, husband no so much. Overall I would make this again making it spicier (it is very mild in my opinion). Thanks for a great recipe.

Delicious Ham and Potato Soup

I asked for some help peeling potatoes and my 13-year-old son volunteered and then ended up making this soup mostly on his own. This is the most fabulous Potato & Ham soup we have ever had and he was so proud to have made it. I only had turkey ham so that's what we used but we didn't alter a thing beyond that. While the white sauce was thickening, and he was stirring constantly, my son couldn't help but comment on the fabulous smell coming from the cooking potato and ham mix. Very, very tasty soup that will definitely be included in our winter rotation often.

Hot Cocoa Mix in a Jar

I made this recipe with Ovaltine as one reviewer suggested since I was going to package it up to send to deployed soldiers. My husband noted the use of Ovaltine right off and said more chocolate and less Ovaltine. We doubled all the chocolate items and added more powdered sugar. Still not the chocolately goodness we were going for, but it will do for home.

Chicken Parmigiana

The family thought this was very tasty and it was very easy to make. We did take the advice of other reviewers and seasoned the chicken with garlic salt and ground pepper before coating it with Italian seasoned crumbs. I agree with the review(s) that said the chicken should be pounded to the same thickness and I will do that next time. However, I think it is only fair to rate the recipe as it is presented to the community. Definitely a keeper.

G-ma's Rice

I followed the directions on this and found that it makes a TON of rice - way more than I expected. That was ok since I was trying the recipe out before serving it for a party, but in the end the family didn't like it enough to serve it again so I'll have to find something else. We did find it to be bland, but I'm not sure if that's the recipe or if that's just how it is supposed to taste. I would expect it to have more flavor even as a side dish.

Mexican Corn

I made this according to the directions and was overwhelmed by the cream cheese. I might have given it a better rating if I had used 1/2 a block as other suggested, but I like to run through the recipe and rate it as written before I go making changes. In any case, I probably won't make this one again as the family didn't like it much.

Taffy Apple Salad III

This was very tasty and well received by children who don't like apples or pineapples. The adults liked it too. The only problem I had was finding raw Spanish peanuts - I just used salted peanuts and it was just fine. I also used one green and one red apple per my children's request. Making it again shortly for an office gathering.

Potato Dumplings II

I was looking for something that didn't require actual potatoes because I didn't have any. For the simplicity I didn't expect much, but these are excellent. I actually made them with only 1 egg (didn't read the recipe well) and they turned out just fine. Like other reviewers I had a problem kneading them. I used my dough hook and just kept adding flour but they were still sticky even after adding almost 3/4 C more flour. I pretty much took a spoon and dumped 6 blobs into chicken broth to cook. They weren't pretty, but they taste great. Next time I will make them smaller since I thought they were too big. I agree that on their own they are bland, but I've never eaten dumplings without buttter and salt or gravy of some sort. We will definately have these again. Thank you for sharing.

Chili Dog Casserole II

This was actually really good, although from the reviews I expected it to be. Followed some other reviewers choices and used turkey dogs, but I would still like to try it with beef dogs. Used low carb flour tortillas and precooked the dogs. Very tasty. Had it as leftovers the 2nd day and could have nuked it a bit longer since the dogs were cool.

I was surprised that everyone in my household liked this because of the tomato base, but they did. We weren't fond of the cumin, which I had cut in 1/2, and might try to add more chili powder next time and less cumin.

Flourless Peanut Butter Cookies

These are so easy the kids can make them for something quick and sweet in the evening. Very peanut buttery. Best on the day they're made - we freeze the leftovers and that seems to work ok.

Macaroni and Cheese Bake

Very good place to start - I was able to use what I had on hand and make something good for dinner. Used shredded cheese and half & half (discovered I was out of milk after I started) and no tomatoes since my kids don't like them. Would add some spices next time to kick it up a bit.

Red Potato Chicken

First, I chose this recipe because it was kid friendly to make - they cut the potatoes and poured the dressing. However, we found the results to be less than stellar. The chicken was fair, better with the sauce on top, but the sauce was so oily no one wanted to eat it. It probably would have been better made into a gravy instead of the greasy mess it was (we used creamy italian dressing as suggested). The potatoes would have been better off cut in quarters as only a portion of them were cooked through - I even put it in the oven for an extra 15 minutes but still had some potatoes that weren't done. Overall it's probably not a recipe we'll try again, despite the fact it was easy for the kids to help make.

Fast Chicken Divan

One of my all time favorites from when I was a kid! This recipe was great and very fast. We'll definately make it again, but may add a little milk so the sauce reaches the bottom of the pan.

Chicken Puffs

My husband and I liked these, the kids were reluctant to try them for some reason. A bit time consuming to put together and it makes a lot! I felt like I was jumping up every few minutes to get another pan out of the oven. Great warmed up the next day as leftovers.
