Vegetable Cheese Soup I
I think this is a decent start for a good soup but it didn't wow us. I have leftovers that haven't been touched. I did not have creamed corn so I added canned corn and I used salsa con queso as another reviewer suggested. I like the combination of corn, potato and carrots and the kick the salsa con queso gave it. At the end of the cooking time I mashed the potatoes and carrots a bit in an attempt to thicken it up a little. The overall taste was ok, but it needed something to liven it up and I'm not a good enough (or experimental) cook to determine what it needed. My daughter didn't like the corn, my son thought it needed meat. I will give this one another chance using less broth, a few spices and adding chicken and we'll see what we get.

Kalua Pig in a Slow Cooker
We have made this more than once and love it. I typically use a pork shoulder. Until just recently I was making this with regular sea salt, but I now have some Hawaiian salt purchased just to make this recipe. I wonder if that will change the taste any? Great for football games, birthday parties and New Year's Eve. You won't be disappointed with this tenderness and flavor of this pork.

Potato Pancakes I
My daughter has been asking for potato pancakes for a while now, so we have tried a few different recipes. She liked this one by far the best. She doesn't like onions, so I did leave out the "real" onion and used a dried minced onion for flavor. I had a little trouble with them falling apart when I flipped them, but since I'm a novice potato pancake maker maybe it was my technique.
