Cumin and Coriander Chickpea Salad

I made this just as written yesterday and it was just what the doctor ordered! It was light and perfect with a simple green salad. The dressing was great! A keeper for a cold night when I don't want to cook but want a little warm spice in my meal.

Corn Dogs

I missed corn dogs (or as they are often called in Quebec, "Pogos", since we went plant strong years ago. I really appreciate this recipe so I can make meat free versions of the beloved corn dog at home! I substitute unsweetened mother-less milk (almond or soy) and use an egg replacer for perfect results every time! This became a real fave in our home!

Crispy Barbequed Tofu Slices

This has become a recurring favourite at our house. We gave up meat as a family and every now and again we miss some of our old comfort foods like BBQ wings or ribs. This is a great meal when we want something quick and familiar. The secret is finding a good quality Tofu. Firm but still gives easily to the touch and not lumpy and grainy in texture.

The Best Vegetarian Chili in the World

We made this last night pretty much as written and it really was amazing! My local grocer was out of jalapeno peppers but I found some preserved in jars and used those. I only made one true change and that was to add a couple of tablespoons of dark organic ground coco to tie the spices and the "heat" together. A friend of mine showed me this trick and I loved it so much I add it almost every time I cook chili. A word of advice for those who are concerned with the heat of this dish: it is really important to let it simmer for the full 45 minutes or maybe even a bit more. I always find that slow cooking ties in the flavours and takes the edge off the heat.

Vegetarian Moussaka

Everyone at my house loved this! We generally spend Sunday's together and we often use the afternoon to cook together for the Sunday dinner meal.And every time we would make the meat version of Moussaka, it would take us all afternoon anyway (as I really enjoy the eggplant slices very well baked on both sides) so the length of time involved did not dissuade me. I agree with a previous comment: good food takes time. I followed much of the advice about roasting the veggies as well as advice concerning substitutions to lower fat and remove some of the dairy (Thanks everyone!). Fresh fragrant herbs from our farmers market made this dish an event. I will definately make this again and I am adding it to my list of recipes for when company is expected for dinner!

Cranberry Pie I

I made this pie for Chistmas last year and again for Mother's Day and let me say, it is such a simple and tasty pie. I use a good sugar substitute made for baking as we have diabetics in the family and this pie still turned out perfect. I was afraid it would be too sour but it was just lovely! This will be featuring at our family table as a regular from now on!

Beth's Spicy Oatmeal Raisin Cookies

These cookies are divine! The spice and oatmeal combo is glorious. They always say you should bake cookies when you have an open house and I chose to bake these! I made a triple batch and a stream of visitors later, they were all gone. I don't know if I can thank the cookies but we only needed one open house to sell our home!

Quick Cassoulet

This recipe is so good when you want to feed alot of people as it lends itself easily to doubling (or more!). We used a vegetarian "Spicy Italian" sausage and it worked like a charm. We did a Mother's day potluck and my husband took care of the cooking. This is a good recipe to start your kids cooking in the kitchen as well. It is simple, quick and full of so much flavour. This is definately a keeper in our home.

Cabbage Roll Casserole

My Mom made traditional Mennonite cabbage rolls all the time when I was little. This casserole is a great way for me to get the same flavours but without the time consuming process of making the rolls. This one is a favourite in my house!

Banana Meatloaf

A very interesting alternative to regular Meatloaf! Sometimes we see bananas as simple dessert fare but many cultures use bananas or plantains in their day-to-day meal preparations.I found the bananas lended themselves well with the mustard and spices.
