About this Cook
We went vegetarian (99% vegan)about 2 years ago. I love the challenge! Learning how to cook all over again using only plant based sources has been a really enjoyable journey!
My favorite things to cook
Anything as long as I am receiving guests. I LOVE cooking for big groups! I get joy from seeing people really enjoying themselves and loving the food.
My favorite family cooking traditions
Baking bread and cookies for Christmas! My mother would bake for weeks so she would be ready for family that would travel from far for Christmas. Maybe that is where I get the bug for hosting big dinners!
My cooking triumphs
Hosting a huge BBQ with chili and fresh made corn tortillas, hot dogs, hamburgers, bean cassolet, baked bread, pie etc., all from scratch (except for the dogs) and only telling my guests at the end that it was ALL VEGAN! The look of disbelief was priceless!
My cooking tragedies
You really can't make Duncan Hines fudge without eggs. You really, really can't. BUT it was a sort of interesting fudge brittle. The kids ate it just the same. :-)

Cumin and Coriander Chickpea Salad
I made this just as written yesterday and it was just what the doctor ordered! It was light and perfect with a simple green salad. The dressing was great! A keeper for a cold night when I don't want to cook but want a little warm spice in my meal.

Vegan Bean Taco Filling
This was so good just as written. We have a taco night every couple of weeks and this was a huge hit!

Corn Dogs
Amazing. Our family went vegetarian over a year ago and corn dogs was one of those comfort snacks my husband missed. I used unsweetened soy milk in place of milk and cut the sugar to just a few tablespoons and the veggie corn dogs were amazing! Thanks so much for sharing this recipe!
