Maple Cajun Mahi Mahi

Delicious! It tasted exactly like the butterfish recipe they have at Roy's Hawaiian Fusion Restaurant. My husband and 4 kids loved it! It was not too sweet at all and the flavors were very balanced. I used swai instead of mahi mahi and Italian seasoning instead of garlic powder because that is what I had. I will be making this recipe again and again.

Creamy Chicken and Wild Rice Soup

I doubled the recipe, made homemade chicken stock, used boneless chicken thighs, lactose free 2% milk, and half of the amount of butter , increased the black pepper, and added white pepper, cayenne pepper, 1 onion and 2 chicken bullions. I served it with corn bread. The soup was amazing! My husband and 3 sons loved it. I will definitely make this recipe again and again.

Pineapple Banana Bread

It was great! My family loved it. I didn't have crushed pineapple so I pureed 1 1/2 cups of pineapple chunks with some of it's juice, added nutmeg, used 1 1/4 cups of butter instead of the oil, and used half flour and half oatmeal instead of flour only. I baked it in a 9x13 glass pan for 55 minutes. This bread was awesome and I will definitely make this on a regular basis.

Rich Chocolate Frosting

Quick, easy, delicious. I halved the recipe and it took me literally a few minutes to make including softening the butter. I will never buy frosting again. This recipe is a keeper! Thanks, Amy!!!

Omg!!! Amazing and simple! I will be making this again and again. I made the Greek Lemon Cake into 4 layers, put lemon curd between each layer and topped it with lemon frosting (all recipes were from this site).

Cola Pork Chops

Quick, easy and delicious. I doubled the recipe, seasoned pork chops with salt and pepper and let sit for a few hours, then seared them on both sides, and used ginger ale instead of cola because that's what I had open. My husband and 3 sons loved it. I served it over rice with fresh string beans on the side. No left overs.

Greek Lemon Cake

I made this cake for my son's class toga party. Everyone loved the cake and the teacher had 3 slices. He said the cake was one of the first dishes to be eat up. I also made a cake for home. The only changes that I made was to use lemon yogurt instead of plain and to add more lemon juice. It was fantastic! This recipe is a keeper!

Spinach Enchiladas

I doubled the recipe, used low fat cottage cheese, added shredded chicken breast, chili powder, salt, cumin, and fresh chopped jalapeno and tomatoes from my garden. I served it with refried beans and spanish rice. I will definitely make this again. My husband and 3 children loved it! I am giving 4 stars because when I tasted the mixture before the additions it was very very bland. After adding seasoning, veges and etc it was very flavorful.

Okra, Chicken and Rice Casserole

I didn't have cream of mushroom soup or brown rice so I used 1 can of coconut milk and 1 cup of basmati rice. I added fresh okra and tomatoes from my garden and added salt, cracked pepper and several spices. I baked at 400 for 45 minutes and it came out perfect. This recipe was quick, easy, very flavorful, and my family loved it. I will definitely make it again.

Wonderful!!! Amazing!!! Quick and Easy!!! I doubled the recipe (as suggested) and added double that amount of all veges, apples, chicken, and curry powder and added cayenne pepper. I did not add cream. I definitely will make this recipe again and again. =)
