Asparagus Soup

Yum! This soup changed my opinion of asparagus! I realized that it's not the flavor of asparagus that I don't like, its the unappetizing way its always been presented to me. The soup is a wonderful base recipe and we plan to put in regular rotation during asparagus season!

Coconut (Haupia) and Chocolate Pie

Although this recipe tasted fabulous, it was rather unappetizing to look at. The pie was, um, oozey, and my family said the coconut layer looked like "snot" and "jellyfish". Looking back I wonder if I grabbed cream of coconut instead of coconut milk? I'm sure it was coconut milk, but who knows... will definitely try this again and will make sure to use coconut MILK and serve ice cold.

Chicken Tequila Fettuccini

This dish is excellent! I have to admit that I changed it quite a bit, but not because I thought I could improve upon it. I used vegetable broth instead of chicken stock. Morningstar "chicken" stips instead of actual chicken. Substituting the chicken dramatically changes how the reciepe is prepared. Other than that, I followed the recipe and it turned out fabulous. A great alternative to traditional Italian pasta dishes. Will make again & again. Thank you for such a great idea!

Penne in Vodka Cream

So, I've made this recipe twice, sort of. The first time, I got all set to start cooking and realized what I thought was a bottle of vodka was really flavored rum. I made the recipe as stated, but substituted white wine for the vodka and it was yummy. We finally bought a bottle of vodka and I made this again last night. Wow wow wow. Wonderful, velvety rich sauce. At hubby's request I added onion, mushroom and vegetarian chicken strips. Great sauce. Great recipe. Thank you!

Irish Cream Bundt Cake

My oh my, was this good! I realize there are over 660 reviews for this cake, but I just had to put my two cents in. Made the cake for our weekly family dinner and most of my family had two pieces! We finished up the rest last night and sat there scraping our plates for every last irish-creamy-morsel. I used a full cup of irish cream for the cake, omitted the pecans and threw in a handful of mini chocolate chips, just for the heck of it. I love the suggestions of many for glazing the cake, but knowing me, the neat trick would end in disaster. So I patiently and lovingly glazed the cake with a pastry brush - took about twenty minutes and gave me time to clean up my mess in the kitchen. (Definitely not a dessert to make when you're in a hurry.) This was soooo good. Thank you!

Best Carrot Cake Ever

Made this for my dad (carrot cakes' biggest fan). He loved it! I ended up making a few changes, mostly because I was so short on time. I used a bag & a half of "matchstick" carrots - about five cups. Gave them a rough chop & soaked them with the raisins in pineapple juice, brown sugar and about 1/4 cup rum for an hour. While everything was soaking, I prepared the batter. Added a 1/2 tsp of baking POWDER and substituted 1/2 cup apple cinnamon applesauce for 1/2 cup of oil, as suggested. Omitted walnuts b/c my dad can't eat them. The batter was so thick that it was slowing down my mixer! I added all the liquid that was left in the carrot-soaking bowl (about a cup), which made the batter quite runny. Folded in the carrots, pineapple & raisins. Baked for about 50 minutes in two 9 inch rounds. Came out perfectly. Super moist & full of flavor. I also had enough batter to make six (heaping) cupcakes. I baked those for about 20 minutes. Used the cream cheese frosting recipe found on this site for the frosting. Will make this again & again. Thank you!!

Quinoa and Black Beans

Wow. I had no idea this would be so good! I could have sat down with the pot and big spoon and chowed down. I made this for a vegetarian friend who just returned home from the hospital. I added one small, diced sweet potato because I had it on hand and thought it would be good. Also a touch of chile powder and oregano, and only one can of beans. Our friend absolutely loved this and I will definitely make it again!

No Bake Cookies I

Made this recipe exactly as stated and followed one reviewer's suggestion to let the chocolate/sugar mixture come to a full rolling boil, then start timing. Cookies turned out perfectly and I got rave reviews. Thank you!

Eggnog Cheesecake III

I have been making cheesecakes for many years but this one is by far the BEST cheesecake I've ever made. Baked it in a water bath. Turned off the oven after 50 minutes, opened the oven door and let it sit in there for an additional ten minutes or so. Turned out perfectly -lightly golden and no cracks! Tasted heavenly. Thank you for this recipe!

Cheddar Bay Biscuits

Fabulous little cheddar bay nuggets of goodness. I've never cared for store-bought baking mix so I used the "Easy Biscuit Mixture" recipe as suggested in the footnotes of this recipe. Total biscuit perfection. They look as delectable as they taste.

Boston Cream Pie Minis

Made this for a superbowl party and, although it tasted wonderful, my execution of this recipe left something to be desired. I ended up salvaging everything by gently crumbling up the cupcakes and layering the cake, pudding and frosting into a trifle dish. A success out of a total mess! Will definitely make again when I have more time and patience!

Cottage Cheese Roast

I have been trying to make a meatless meat loaf for my husband all our married life and finally - success! He loved this recipe. I followed other reviewers suggestions and adjusted the recipe a bit (less oil, more cornflakes, no walnuts, added frozen chopped spinach, garlic powder & crushed red pepper flakes). I also had to bake it for about an hour & twenty minutes. We will make this again & again. Thank you for a great idea!

Bacon Mushroom Swiss Meatloaf

Wow - ten stars. My family devoured this meatloaf, saying repeatedly that I'd outdone myself. My father exclaimed that it was the best dinner I've ever made (hubby and I cook for them almost every weekend!). I added half a packet of onion soup mix and a shake or two of garlic powder. I also made a vegetarian version for myself, using meatless "crumbles" and "bacon". Although a bit time consuming, making my family so happy was well worth the effort. Thank you for such a great idea!

Creamy Banana Bread

I have made this three times in two weeks because my family cannot get enough of it! I skip the pecan layer due to dietary restrictions, and really don't think it needs it, anyway. The cream cheese makes it so deliciously moist, and we love it right out of the oven with a little butter. We even sliced it and made it into french toast topped with sliced, fresh bananas. Sooo good!

Chocolate Eclair Dessert

Love, love, love this dessert. I used to make it all the time when my husband and I were dating, but lost the recipe. I was so excited to find it on this site! Letting this sit in the fridge BEFORE frosting it is important. I let mine sit for at least a half hour before frosting. I try to prepare mine at least a day before serving, as it tastes better and better over time. Really does taste like an eclair! Thanks so much for the recipe!

Maple Apple Crisp

Yum! I was looking for a quick recipe to use up some apples and this was a winner. I reduced the amount of butter, sugar and maple syrup and added a bit of cinnamon to the topping mixture. Baked for 30 minutes. It still turned out very, very sweet, so next time I will choose a tart apple to see if that balances everything out.

Kentucky Tomato Soup

My husband said this should be called "Robust Garden Tomato Soup". It was very good, (we ate the whole pot!) but it just wasn't what we expected. We loved the fresh tomato taste, so I will make again and tweak it so its not so "garden" like and maybe reduce the amount of coffee. I used 3/4 cup Double Black Diamond coffee from Green Mountain and I think it was just too strong.

Mexican Sour Cream Rice

I made this recipe for a tex-mex dinner party. I left out the chile peppers b/c my mother can't take the heat and cooked the rice according to package directions using vegetable stock. It was a HUGE hit and everyone wished I'd made a bigger batch. Next time, I will adjust the recipe for a larger casserole dish. Hubby suggested making a meal out of it by adding black beans and vegan chicken strips. We'll make it spicy next time, too.
