Eggnog Cheesecake III

Reviewed: Dec. 27, 2010
I have been making cheesecakes for many years but this one is by far the BEST cheesecake I've ever made. Baked it in a water bath. Turned off the oven after 50 minutes, opened the oven door and let it sit in there for an additional ten minutes or so. Turned out perfectly -lightly golden and no cracks! Tasted heavenly. Thank you for this recipe!

Coconut (Haupia) and Chocolate Pie

Reviewed: Dec. 7, 2010
Although this recipe tasted fabulous, it was rather unappetizing to look at. The pie was, um, oozey, and my family said the coconut layer looked like "snot" and "jellyfish". Looking back I wonder if I grabbed cream of coconut instead of coconut milk? I'm sure it was coconut milk, but who knows... will definitely try this again and will make sure to use coconut MILK and serve ice cold.

Pumpkin Pancakes

Reviewed: Nov. 26, 2010
A total hit! Followed the recipe exactly and my family RAVED over these pancakes. Just as good if not better than a popular restaurant chain's seasonal pumpkin pancakes. Will make these all year long. Thank you!

Maple Apple Crisp

Reviewed: Oct. 25, 2010
Yum! I was looking for a quick recipe to use up some apples and this was a winner. I reduced the amount of butter, sugar and maple syrup and added a bit of cinnamon to the topping mixture. Baked for 30 minutes. It still turned out very, very sweet, so next time I will choose a tart apple to see if that balances everything out.

Southern Style Banana Split Cake

Reviewed: Oct. 25, 2010
Took this to a dinner party last night for dessert. Everyone liked it, but we all agreed that it needed more banana and more chocolate. I omitted the nuts due to dietary restrictions. Only used 8oz of whipped topping-16oz seemed like way to much. I also only used a 6oz jar of maraschino cherries - again, I think 16oz would have just been too many. Overall, it was good, but I will look for a different dessert recipe next time.

Chicken Tequila Fettuccini

Reviewed: Oct. 4, 2010
This dish is excellent! I have to admit that I changed it quite a bit, but not because I thought I could improve upon it. I used vegetable broth instead of chicken stock. Morningstar "chicken" stips instead of actual chicken. Substituting the chicken dramatically changes how the reciepe is prepared. Other than that, I followed the recipe and it turned out fabulous. A great alternative to traditional Italian pasta dishes. Will make again & again. Thank you for such a great idea!

Chocolate Eclair Dessert

Reviewed: Aug. 31, 2010
Love, love, love this dessert. I used to make it all the time when my husband and I were dating, but lost the recipe. I was so excited to find it on this site! Letting this sit in the fridge BEFORE frosting it is important. I let mine sit for at least a half hour before frosting. I try to prepare mine at least a day before serving, as it tastes better and better over time. Really does taste like an eclair! Thanks so much for the recipe!

Margarita Tube Cake

Reviewed: May 23, 2010
Did not have triple sec so I used grand marnier instead. Otherwise made as stated. It was good - maybe not the best ever, but very good. Really, really moist. Smelled wonderful. I didn't care for the glaze, so if I make again I will tweak that a little. All around good recipe. Thanks for sharing.

No Bake Cookies I

Reviewed: May 9, 2010
Made this recipe exactly as stated and followed one reviewer's suggestion to let the chocolate/sugar mixture come to a full rolling boil, then start timing. Cookies turned out perfectly and I got rave reviews. Thank you!

Penne in Vodka Cream

Reviewed: Feb. 19, 2010
So, I've made this recipe twice, sort of. The first time, I got all set to start cooking and realized what I thought was a bottle of vodka was really flavored rum. I made the recipe as stated, but substituted white wine for the vodka and it was yummy. We finally bought a bottle of vodka and I made this again last night. Wow wow wow. Wonderful, velvety rich sauce. At hubby's request I added onion, mushroom and vegetarian chicken strips. Great sauce. Great recipe. Thank you!

Chocolate Peanut Butter Cups

Reviewed: Feb. 15, 2010
Made these last night exactly as the recipe stated. They were good, but everyone agreed that it was too much chocolate, not enough peanut butter. Will make this again, but adjust the recipe to our tastes. Also, I found filling the paper liners to be annoying and messy. I'll use a mini muffin pan next time and skip the liners entirely.

Apple Harvest Pound Cake with Caramel Glaze

Reviewed: Dec. 7, 2009
Served this to my family for dessert last night. They LOVED it. My mom, a very picky eater, said it was so good that she didn't want to swallow! I substituted raisins for the walnuts since my father can't eat them. Baked it at 325 for 70 minutes as suggested, but I think that might have been too long in my oven. Will try 60 minutes next time and will add an extra apple. I did not care for the caramel glaze but it was a huge hit with the fam. Thank you!
