Spicy Garlic Lime Chicken

Easy & flavorful! Everyone loved it and the seasoning was great! I will add this to the regular rotation. Only change I made was to reduce the chipolte pepper for those who can't take the spice & used fresh Italian parsley added with the lime juice at the end. Delicious!

Lemon Broccoli Pasta

Excellent flavor! Will definitely make again. I added chicken that had been marinated in lemon/herbs. Pre-cooked it with garlic & a few red pepper flakes. I didn't have sour cream so heated some milk with flour wisked in. This helped thicken sauce, but it was very runny. However, in spite of this, the flavor was delicious and everyone loved it. Will make again with fat free sour cream. It's a keeper

Flash-blasted Broccoli and Feta Pasta

We eat a lot of pasta, but this might be the best pasta dish I have ever made!! It was delicious as is. I wasn't sure about the lemon, but all the flavors combined to make a very tasty sauce. The roasted broccoli was awesome - I will make it this way just as a side from now on. The only thing I might change would be to add chicken or shrimp for more protein and to use a little less pasta. I like more topping vs. pasta ratio. Even my pickiest eater cleaner her plate. I highly recommend this recipe - it is a keeper!

Kielbasa with Pasta

This was a delicious quick & easy weekday meal. I used turkey kielbasa & added peas toward the end as I did not have any green pepper. A definite keeper - simple, but good. I also did a little less butter & melted w/ a bit of low fat milk & the parmesean, then added that in.

Addictive Pumpkin Muffins

Muffins are delicious & my somewhat picky kids even love them! I made minor changes including replacing raisins with chocolate chips, cutting the sugar in half & using brown sugar. I also put only a pinch of nutmeg and eliminated the walnuts. Finally, I used 50% whole wheat flour. They turned out moist & very tasty. I made the large batch & froze them. I even made some in the mini muffin tins so I can pop them into school lunch boxes straight from the freezer. Will definitely make these again soon.
