Amazing Chicken

Reviewed: Jun. 8, 2009
Very good. The chicken is moist and tender. I added herbs to the bread crumbs as others suggested. It really boosted the flavor. I also added parmesan cheese over the top at the end so it melted on top.

Grilled Brown Sugar Pork Chops

Excellent sauce. I made it just as described and used a small portion to marinate the pork. It was fantastic!

Lime Fish Tacos

Reviewed: Feb. 15, 2009
Excellent recipe. I soaked the fish in lime juice and fresh cilantro for about 30 min before cooking. The sour cream sauce is all about the hot sauce. At first I thought it was bland, but when I added a generous splash of hot sauce, the flavor really came alive. It went perfectly with the lime and cilantro flavors.

Best Marinara Sauce Yet

Reviewed: Feb. 15, 2009
Delicious! This sauce is perfect as written. I cut the recipe in half and used it on stuffed bell peppers. Yummy. I did not need to add any sugar, but if I put it over pasta, it may have needed it. As others have mentioned, I recommend brown sugar for sweetening pasta sauce. Just 1T will counter the acidic flavor of the tomatoes.

Amanda's Stuffed Peppers

Reviewed: Feb. 15, 2009
Thank you for the rice-less stuffed pepper recipe. It was delicious. My husband asked when we could have this again. I used spicy turkey sausage because that is what I had. It really added nice flavor. I also used the "Best Marinara Sauce Yet" recipe from this site, instead of jar sauce. It was great with this recipe.

Gerry's Chicken Enchiladas

Reviewed: Feb. 15, 2009
Perfect! My husband and I both thought these tasted just as good as those at our favorite mexican restaurant. Instead of dipping the tortillas in heavy cream, I used the sauce the chicken was cooked in. Tasted great and I needed one less ingredient and pot. I also used canned green chiles (mild) because I had some to get rid of. They added a great flavor. This one will be a staple on my menu. Thanks for sharing it.

Slow-Cooked Chili

Reviewed: May 23, 2008
Wow, my husband actually liked it! He can be really picky about chili and I have tried several versions. The only changes I made to the recipe were: 1. White beans instead of kidney because I had them on hand. 2. Cooked it on the stove and simmered it on low for about 5 hrs. When it started to dry out, I added a little beer. It worked well, adding some nice flavor. Good straight forward recipe. Thanks for sharing!

Oven Pot Roast

Reviewed: Nov. 26, 2007
Excellent pot roast with almost no effort! I didn't really believe that it would make "gravy" while cooking but it did! My gravy loving husband even liked it. My only change was that I substituted red wine for the vermouth, as it was all I had, and I added root veggies in the last hour of cooking. My 3 year old even ate it. To make for easier clean up, I browned my roast in an oven safe pan, and just transfered it to the oven. If your pans have "stay cool" handles that can't go into the oven, wrap the handle with aluminum foil, and it'll be fine. I do it all the time. Cove the pan with the foil instad of the lid to keep the meat and gravy moist. Thanks for sharing this great meal!

Sugar Cookie Icing

Reviewed: Oct. 24, 2007
Amazing frosting recipe. It was easy to mix together, and spread. Then it hardened in about 15 minutes so I could stack the cookies. None of the cookies smeared or dented! And the decorating sugars I sprinkled on top stuck really well. The almond extract was better than I thought it would be, and I'm glad I tried it instead of going with vanilla. Thanks for sharing this great recipe.

Squash-Apple Bake

Reviewed: Oct. 23, 2007
Fabulous! I made this recipe exactly as described and it came out just like my mom's. No higher praise than that! Even my 3 year old loved it. Note: Due to the long cooking time, cut all the fruit into big chunks so as not to over bake.

Sweet Mustard Chicken Bake

Reviewed: Oct. 23, 2007
Great Easy Meal! I love that the ingredients are all things that I keep stocked in the pantry. I only needed 2 chicken breasts so I cut the sauce in half and there was still a lot. I'm not good about basting once the meat goes into the oven. With a 3 year old, I want to "set it and forget it", so my sauce didn't glaze very well. I still gave 5 stars because that was my own problem. Next time, I will only pour half the sauce over the meat, and put the rest in a sauce pan, to thicken. Then pour the sauce over the meat at the end. I served this with fresh green beans and squash-apple bake. A great Fall meal. Fast, easy and delicious! You can't ask for more. Next time, I'll try this with pork chops. Should be great!
