Dip For The Stars

Absolutely the best dip ever! I made it for a holiday party this past weekend - everyone loved it AND many asked me for the recipe~! I did make a few changes based on other reviews. First off I made my own pesto sauce from this recipe off the site: http://allrecipes.com/Recipe/Pesto-Sauce/Detail.aspx - I halved the amount, used pine nuts and didn't add much salt which I think is really what made the dip as a whole good because I think store bought pesto is much saltier and the dip is already very flavorful on its own. For the dip, I also halved the recipe, still made a lot good for 15-20 people. Used a creamy feta, fresh cream cheese from a cheese market. Used about 1 1/4 cup of sun dried tomatoes in jar in oil - but made sure to drain as much oil as possible. Used all the pesto which was about 1 1/2 cup, again try to leave out oily parts. I added more tomatoes and pesto because other reviews stated there was too much cheese mixture, and it's true. So I just made the dip as I wanted and added more of the other layers. Best served with whole wheat pita or baguettes and make sure you place them on a separate plate because the dip will still be a bit oily on the bottom. WONDERFUL DIP!!

Oven Roasted Red Potatoes

LOVE this one! Since I try to avoid adding pre-mixed things, I made my own spice mix to put with potatoes. Used cookie sheet instead and season with: oregano, parsley, garlic, salt, and pepper and other spices. Use less oil. Add baby carrots. - COMES OUT SO YUM as a perfect side dish to anything!

The Best Meatloaf

TIP: Put bread on the bottom of the loaf pan to soak up the grease! ---- Reading other reviews I also sauteed onions/green peppers first then add to mix. I used 3 TBS of A1 thick & hearty in the mix, then brushed top with BBQ sauce (Sweet Baby Ray's Honey Chipotle). Next time I will use less milk, came out a little soggy compared to other meat loafs I've made through this site. Serve with Ketchup, YUM!

Chicken, Stuffing and Green Bean Casserole

I made this dish for Thanksgiving and it was absolutely delicious! Reading other reviews, I did make some changes to the recipe. I used cream of mushroom and added a small can of sliced mushrooms (cause I love mushrooms). I also added 1/2 cup 1% low fat milk and cooked the chicken with a couple chopped up cloves of garlic. I did not add any extra salt, but did pepper it a little, used "no salt added" green beans and Stovetops Chicken stuffing. Only used about 1/2 cup of cheese (chedder & jack) to sprinkle on then topped it off with about 1 1/2 cup of french fried onions. Very easy recipe and very very good! My boyfriend is now requesting I make it all the time!

Zesty Slow Cooker Chicken Barbecue

Easy and tasty. I used unfrozen chicken breasts and only used 3 large. Like other reviewers suggested, I used half bottle of (12 oz) BBQ sauce for the mix then cooked on HIGH for 3 hours - shredded chicken and then added the rest of the BBQ sauce and cooked on LOW for 1 more hour. Came out tender and perfectly sauced, not watery or runny at all.

Sauteed Green Beans

YUM! I followed what another review suggested and cooked the bacon, removed - then drained most of the grease, put in a pat of butter and browned the almond slivers, removed those, then cooked the green beans (mine were fresh so i had to cook them longer) and then mixed in the bacon bits and almonds for a couple mins in the end before serving. will def. make again!!

Blackened Salmon Fillets

It was a bi too spicy for us but just had to alter the spice mix to how we like it, it's wonderful because takes away the fishiness and brings good flavor without having to be doused in lemon (which I hate). I will be using this recipe over and over. It's quick, easy and so healthy. I serve with sauteed spinach and brown rice. DELICIOUS!

Slow Cooker Split Pea Sausage Soup

Hearty, yummy soup. A comfort food dish for sure. After reading reviews I also substituted 8 cups of chicken broth (2 big boxes) in place of the water and chicken bouillon cubes. I used white potatoes and 1/2 tsp of Italian seasoning (instead of just oregano) and I added 1/2 tsp of black pepper. I also used 1lb of a bone-in ham slice that I found in my farmers market, chopped it up & put the bone in as well for extra flavor. Cooked on high for 6 hours, came out perfectly delicious!! Will definitely be making this one over and over again.

Slow Cooker Tuscan Beef Stew

Easy to make, I added some extra spices to make it more flavorful. I also put in a large pot roast piece of beef since I don't like the cubes (they dry out too easy). Added a potato and 1 can of beans instead of 2.

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

Super delicious and easy to make! I used 2 cans of Italian seasoned diced tomatoes, added 1 small can of sliced mushrooms and used 1 can of artichokes, not marinated. I'm making it again tomorrow!

Self-Filled Cupcakes I

I made it for my team at work and they loved it!! My filling did not sink to the bottom, I think it's all about how you mix the ingredients so that the consistency comes out right. I filled half the cupcake with mix, then put in a table spoon full of filling and topped with a tablespoon of cake mix. Came out perfect! Delicious!

Angel Hair Pasta with Garlic Shrimp and Broccoli

Great recipe used 2% milk instead of whole, didn't have pesto so used basil instead, used fresh broccoli and added mushrooms as well. If you like creamy, this is the recipe for you. I felt it was a bit too heavy but it is a cream sauce =P

Grilled Lemon Herb Pork Chops

I doubled the sauce as other reviewers suggested. Also used Italian seasoning in place of just oregano, added 1/4 cup soy sauce and used garlic pepper instead of just pepper. Hubby didn't like it so lemony so I will reduce the lemon juice next time. Marinated it overnight turned our very flavorful!

Scrambled Egg Muffins

BEST BREAKFAST ON THE GO! I make these now every week so my husband and I can bring them to work, pop them in the microwave and get an easy hearty breakfast. TIP: I use 8 eggs and 6 egg whites to lower the cholesterol content a bit. I use the foil liners and spray each one generously with original PAM. This will get them out right away when done, but they do sink in like a souffle so it's either that or less spray and they will stick a bit to the sides but keep a better shape in the end. Either way they are DELICIOUS and you can put anything in them you want! Very forgiving recipe very make-your-own. I used peppered bacon and red peppers, next time I will use mushrooms w/Canadian bacon. YUM!!
