Chicken, Stuffing and Green Bean Casserole

I made this dish for Thanksgiving and it was absolutely delicious! Reading other reviews, I did make some changes to the recipe. I used cream of mushroom and added a small can of sliced mushrooms (cause I love mushrooms). I also added 1/2 cup 1% low fat milk and cooked the chicken with a couple chopped up cloves of garlic. I did not add any extra salt, but did pepper it a little, used "no salt added" green beans and Stovetops Chicken stuffing. Only used about 1/2 cup of cheese (chedder & jack) to sprinkle on then topped it off with about 1 1/2 cup of french fried onions. Very easy recipe and very very good! My boyfriend is now requesting I make it all the time!

Peanut Butter Chip Chocolate Cookies

I used mini reese's peanut butter cups in the middle of the cookies instead of using peanut butter chips - turned out perfect! I also added 1 tbsp of water to make the cookies more moist.

Chocolate Chip Pumpkin Bread

Sooooo good!! I didn't put walnuts in and added another handful of mini chocolate chips - came out very moist and delicious!! Also, because I couldn't find 9x5 pans, I just used the disposable ones from the market that come in 3, they are like 8x4 but they fit, I just bake for about 6 mins longer.

Big Soft Ginger Cookies

Excellent recipe! Most definitely very soft and yummy! I added apple cider instead of water - put dough in fridge for about 1 1/2 hour - came out perfect! a big hit at my office!

Mexican Casserole

This is a very simple, quick and forgiving recipe. First time making it - reading other reviews I decided to add my own ingredients. I sauteed the chicken with garlic (2 cloves, pressed) and onions (1/3), drained oil and shredded the chicken, then added spicy taco seasoning, drained corn and beans, I love sauce so I added 1 can of the rotel tomatoes and green chiles and threw in about 1.5 cups of salsa (Vons brand, fiesta salsa). I layered the bottom of the dish with Uncle Ben's 90 second Roasted Chicken rice (cooked). I used a smaller dish as well, the 9x13 would have made it way too shallow. Instead i used a 8" x 8" x 2" Baking Square Dish. Topped with cheese and crushed white corn chips - baked and worked out perfectly~!
